Since getting my Instant Pot more than a year ago, I’ve become completely addicted to using it multiple times a week.  With our big family on a budget, chicken is a staple so I’m so excited to share these 20+ Instant Pot Chicken Recipes.

Before I list all the amazing recipes I found on Pinterest, I feel like it would be silly to not mention the most popular recipe here on Pressure Cooker Meals : Instant Pot Chicken Alfredo.

Since pasta and Italian foods are my absolute favorite, it’s only right that everybody else loves that recipe best too, right?

Instant Pot Chicken Stock is easy to make and full of so much flavor! This homemade bone broth can be made in less than half the time of stove-top or slow cooker methods – you’ll never want to make it any other way!

I’m a huge advocate for not wasting. I don’t like to waste time, money, food… you get the idea.  For this reason, I’m always looking for ways to reinvent leftovers and use up produce that’s going bad.  Those ideas are what led me to sharing how to make homemade Instant Pot Chicken Stock.

For Father’s Day last year, we gave my husband this grill/smoker combo. Since buying it, we’ve grilled countless times and he’s smoked briskets, roasts and now whole chickens.

Anywho – so we had the smoked chickens (two for our large family) over the weekend and they were incredibly delicious. But at the end of the meal, I had these two carcasses and lots of skin and bits of meat leftover and I just knew I needed to get one more use out of the leftovers.

Instant Pot Chicken Stock

That’s when it occurred to me that I could use them to make homemade chicken stock. Even better… Instant Pot Chicken Stock!  I skimmed a few recipes, then dug through my refrigerator and pantry for leftoevers and ingredients that I could use for flavor.

Granted, nobody mentioned using smoked chicken for making broth but I figured I’d give it a try!  Since I had two leftover chickens, I got out both of my Instant Pots and doubled up. I plan to use some of the stock in my chicken & rice recipe tonight and freeze the rest for later.

In each pot of chicken stock, here’s what I included: the carcass and scraps of meat, skin, etc, baby carrots (that had gone soft), half an onion (also on the verge of going bad), minced garlic, a bay leaf, and some salt and pepper.

Several recipes I skimmed through also suggested celery and other herbs and spices, but I didn’t have that on hand, so I rolled with what I had.  I covered it all in water up to the fill line then used the manual setting.

The cooking times also varied from recipe to recipe… anywhere from 20 minutes to 120 minutes.  Since I wanted to use the broth that night in our supper, I settled in the middle and did 45 minutes for one pot and 60 minutes for the other. I couldn’t tell much difference in the two, but generally speaking, I imagine the longer you cook it, the better it’ll be.

Once the Instant Pot beeps and is done, allow it to natural release for at least 30 minutes.  Then you can strain it (discard all solids) and use it immediately!  Or let it cool to store in the frig for 5 days or freeze for up to 3 months.  I did leave a few bits of chicken in the pot for the chicken and rice I was making, but usually I strain it all out.

And that’s it!  Currently I use stock for homemade Chicken Dressing (think Thanksgiving), chicken & rice, chicken noodle soup, potato soup, and so much more! It’s full of flavor and cheap, cheap, cheap!  Two of my favorite things!!

How to store homemade chicken stock…

If I keep any chicken stock in the refrigerator, I usually try to use it within 3-4 days (although I think it would keep okay for up to a week). I almost always just pour it up in quart jars. I freeze the rest of the stock in small one-cup freezer containers or these larger 4 cup containters.

Ingredients

Scale

1 chicken carcass and scraps of meat

handful of carrots

half an onion, rough chopped

1 tablespoon minced garlic

a bay leaf

salt and pepper, to taste

water – enough to cover everything (or to the fill line)

optional: celery, thyme, ginger, or other spices you like!


Instructions

  1. Cut onion and carrots, add to pot
  2. Add everything else into the pot (whole)
  3. Fill with water to the line right before the max line on your pot
  4. Cook on High Pressure for 45 minutes, quick release
  5. Strain and store in jars in the fridge or in freezer-safe containers in your freezer.

Instant Pot Asian Glazed Chicken Wings

These Instant Pot Asian Glazed Chicken Wings have lots of flavor with a little bit of sweet, lots of sticky sauce and the level of spicy can be adjusted for your family!

I used to make chicken wings for my family on a regular basis and then for whatever reason, they sort of slipped off my radar. Then a few months ago, I ordered some wings from our local pizza place and that made me start craving them again.

It turns out it was just in time for football season. If you’re hosting a game day party or having a big get-together for the Super Bowl, these are a perfect crowd-pleasing food.  For us, we didn’t even need a special occassion – I made them for a weekend lunch and we gobbled them up!

These wings do have a lot of ingredients and generally speaking, I’m a lazy cook. But I had most everything on hand already since we regularly make Asian-inspired food at home. These are published on my other blog, Rose Bakes, but a some of our favorites are Crock Pot Beef & Veggies over Rice, homemade sushi, and Homemade Chinese Orange Pineapple Chicken to name a few.

I did have to buy the Housin and Ponzu Sauces – those were new for me.  And actually – I think I should’ve gotten the non-lime Ponzu sauce, but the one I purchased worked 🙂  Also, skip the Sriracha Sauce if you don’t want spicy wings. I like a little touch of spicy, but not so much that my kids complain.

Start with 4 pounds of frozen wings.

Put the chicken wings in your Instant Pot and Cook on high pressure for 4 minutes with the rack on the bottom and 1 cup of water.

Note: If you are using fresh wings, be sure to add 2 cups of water.  If you are new to using your Instant Pot — you can manually enter the pressure time by hitting “manual”.  The time will defaut to 30 minutes;  you will need to bring it down to 4. Once you hit the desired time the pressure cooker will start automatically.

Next, while the wings are cooking (it’ll take about 10 minutes for the pot to seal + cook time)…

Make the sauce.

Then you’ll add all the sauces, brown sugar, lime, orange, garlic, ginger, and the bottoms of the green onions (white part only) into a pot on the stove and let it reduce to about half.  I used diced sweet onion inestead of the green onions… don’t ask – I just wasnt’ thinking.  Once your sauce is reduced, strain it to get rid of the pieces of ginger and onion.

Preheat oven to 450°F.

Once the wings are done in the Instant Pot, you should release  the pressure. (Turn the black knob to “venting” at the top of your pot. Be sure not to put your hands in the way of the steam!)

Place the wings on a sheet pan, place in the oven for 10 minutes on 450°F.  You can do this directly on a cookie sheet, but I prefer to use a silicone mat under the wings to make cleanup a little bit easier.

Take them out, then coat with the reduced sauce. I find the easiest way to do this is to put them in the pot with the sauce, then stir them up with a spoon until coated.

Place them back on the cookie sheet and in the oven again for 5 minutes on 450°F then serve!  If you like them a little crispy, you can put them under the broiler for a minute or two. That’s my favorite way to serve them!

Serve them hot and enjoy!

Garnish with the tops of the green onions, sliced!  We all like to eat our wings with either Blue Cheese Dressing or Ranch Dressing, but they’re delicious all on their own too!

Instant Pot Asian Glazed Chicken Wings

Description

These sweet and spicy Instant Pot Asian Glazed Chicken Wings are packed with flavor and will be hit at parties!


Ingredients

Scale
  • 4 lbs frozen chicken wings
  • 1 cup water*
  • 1 Cup Soy Sauce
  • 1 Cup Ponzu
  • 1 Tablespoon Hoisin
  • 3/4 Cup Brown Sugar
  • Juice of 1 Lime (~ 2 Tbsp lime juice)
  • Juice of 2 Oranges (~ 1/2 cup orange juice)
  • 2 Bunches Green Onions (whites only in sauce)
  • 1/4 Cup Rice Vinegar
  • Splash Sesame Oil
  • 2“x2” piece of ginger, grated (I substitued Squeeze Ginger)
  • 2 cloves of garlic, minced (I use 2 tsp. this minced garlic)
  • Sriracha Sauce, to taste (I do a dash or two)

Instructions

Place the rack in your Instant Pot, then place the chicken wings in and pour 1 cup of water in the bottom.  Cook on high pressure for 4 minutes.

In a medium saucepan, mix together the soy sauce, sesame seed oil, hoisin sauce, rice wine vinegar, ponzu sauce, brown sugar, lime and orange juices, garlic, ginger and the bottoms of the green onions.

Cook on low until it’s reduced by half.  While it’s simmering, preheat the oven to 450°F.

Once the wings are done in the Instant Pot, quick release the pressure.  Spray a cookie sheet with non-stick spray (or use silicone mat) , then spread the wings out.

Cook in the oven for 10 minutes to crisp them up.  Strain the reduced sauce to get rid of ginger and onion, then pour the sauce over the wings and toss them.

Cook for 5 more minutes at 450°F.  Garnish with sliced green onions and serve hot!

See note below for spicier wings!

Notes

*If you’re using fresh wings, use 2 cups of water.

Add a dash or two of srichacha sauce for spicier wings!

Instant Pot Mango Pineapple Chicken

When I bought Pressure Cooker Meals (this website), my goal was to work through all of the recipes and rewrite them in my voice.  Since this Instant Pot Mango Pineapple Chicken was the second most popular recipe on the blog, it was high on my list of recipes to rewrite.

Having never had Instant Pot Mango Pineapple Chicken, I knew I had to make it to write about it ?

I’m happy to report that my family loved this dish!  All of my kids (and the hubby) love pineapple and most of the kids love mango, so I knew there was a good chance they’d like this.

Instant Pot Chicken Alfredo

Dry pasta in a pot?  Sounds crazy, right?  Let me assure you that this Instant Pot Chicken Alfredo is sooooo easy and it cooks the pasta a perfect al dente!  It was a winner for my kiddos, because they ate it all up.  Can we say WINNING!?

This recipe really is oh-so easy and delicious.  I also love that I don’t have to mess up a ton of dishes to make a filling meal for my family.  We add some toasted garlic bread and maybe a salad and call it a meal!

Here are the easy-peasy ingredients:

  • 1.5 – 2 pounds of chicken breast, chopped
  • 1 (22 oz) jar of alfredo sauce
  • 1 pound pasta, broken
  • 2 Tbsp oil
  • 2 Tbsp minced garlic
  • dash of pepper
  • 2 cups water
  • parmesan for garnish (optional)

A few pointers… to make the chicken cook faster, cut it into bite-size (or a little larger) chunks.

To cook it, add a little oil to your Instant Pot and turn it on “Saute.”  Let the oil get hot, then add in the chicken. Cook all the way through (stirring as needed).

This gives the chicken some extra color and flavor when it is a little seared on all sides.

When it’s done, add all of the other ingredients to the pot and stir. Make sure the pasta is broken into smaller pieces and completely covered in liquid (as best you can). Stir to separate the pasta so it doesn’t cook in one large clump.

Instant Pot Orange Chicken is a meal that is ready in just 15 minutes and gives your family a perfect excuse to enjoy delicious healthy dinners together!

Instant Pot Orange Chicken is one of those recipes that everyone raves over, and you only spent 5 minutes of your time to prepare it.  This is a great dish to double and make for company.  It goes great with rice, potatoes, quinoa, couscous, or just with steamed vegetables or zoodles if you are skipping grains.

Instant Pot Orange Chicken is a meal that is ready in just 15 minutes and gives your family a perfect excuse to enjoy delicious healthy dinners together!

Orange Chicken is traditionally a deep fried chicken covered in an orange sauce found at Chinese buffets.  I love that, but really, I wanted a healthy and easy option.  This came as the result of having a few ingredients on hand one day.  I served with a side of rice and steamed vegetables, and had a meal that everyone gobbled up and asked for seconds.

Instant Pot Orange Chicken

In a small bowl, mix together teriyaki sauce, oyster sauce, and ginger.  Spread olive oil over the bottom of the Instant Pot then add the chicken and pour the sauce mixture over top.

Pour in the chicken broth and top with orange slices.  Put on the lid and set to seal.  Set to Meat for 15 minutes.  Quick release once it has finished cooking.

Instant Pot Orange Chicken

Serve with rice and vegetables.

Everyone loves a good Chicken Tortilla Soup Recipe, and our Instant Pot version is going to be a new favorite.  I love that I can throw all of this into the Instant Pot and it will be done in under 30 minutes!  That’s a perfect easy meal for anyone.

Instant Pot Chicken Tortilla Soup

The best part of this easy Instant Pot Chicken Tortilla soup is that I almost always have all of these ingredients on hand in the pantry and freezer.  Make a point of keeping them on hand, and you’ll know you have an easy meal anytime.

Ingredients for Chicken Tortilla Soup:

1 pound boneless skinless chicken breasts or thighs (your preference), cubed

1 tablespoon olive oil

1 onion, diced

1 bell pepper, diced

1 bag frozen mixed vegetables

1 clove garlic, minced

4 cups chicken broth

2 cups water

1 20oz can green chile enchilada sauce

1 tablespoon ground cumin, divided

1 teaspoon salt

1 teaspoon black pepper

4 corn tortillas, cut into small strips

Directions for Chicken Tortilla Soup:

Drizzle olive oil on the bottom of Instant Pot.

Season chicken with 1/2 cumin, salt, and pepper then place in the bottom of the Instant Pot.

Add onion, bell pepper, frozen vegetables, garlic, and top with enchilada sauce, water, and chicken broth.

Stir well to combine.

Add lid and set to seal.

Set to soup setting for 25 minutes.

All to come to pressure and cook.  Allow to natural release for 2 minutes, then quick release.

Stir in corn tortillas or serve with tortilla chips on the side

  2. Season chicken with 1/2 cumin, salt, and pepper then place in the bottom of the Instant Pot.
  3. Add onion, bell pepper, frozen vegetables, garlic, and top with enchilada sauce and chicken broth.
  4. Stir well to combine.
  5. Add lid and set to seal.
  6. Set to soup setting for 25 minutes.
  7. All to come to pressure and cook. Allow to natural release for 2 minutes, then quick release.
  8. Stir in corn tortillas or serve with tortillas chips on the side

As you can see, this is a super simple chicken tortilla soup recipe.  While I don’t include tortillas in the actual soup, I recommend adding them after you have finished the cooking process. I prefer a bit of “bite” in them in my soup.  If you like them to thicken the soup more, you may prefer to add during the cooking process.

Chicken Spaghetti is a favorite family meal.  It’s one of those classic potluck dishes that goes a long way while packing a punch of flavor.  This Instant Pot Chicken Spaghetti gets rid of a lot of the added processed foods while giving you all of the flavors you want.  It is ideal for a fast weeknight meal, and will surely be a favorite for your family.

Pressure Cooker Chicken Spaghetti Recipe

While this Instant Pot Chicken Spaghetti comes together in minutes, you’ll be able to easily whip up a side salad, dessert, or even some yummy garlic toast to serve on the side.  No matter what you serve with this chicken spaghetti, this is a delicious meal everyone will love!

Ingredients for Chicken Spaghetti:

1 pound boneless skinless chicken breasts

2 cups chicken stock

2 cups diced tomatoes

1 8 oz can diced green chiles

1 tablespoon cumin

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon black pepper

8 oz cream cheese

2 cups sharp cheddar cheese, shredded

1 cup pepper jack, shredded

1 8 oz package thin spaghetti

Directions for Chicken Spaghetti:

In Instant Pot, add chicken stock, chicken, tomatoes, green chiles, cumin, garlic powder, onion powder, paprika, and black pepper.

Place lid on Instant Pot and set to seal.

Cook on Manual High heat for 15 minutes.

Remove lid and use forks or tongs to shred chicken and mix together.

This simple Chili Verde in the Pressure Cooker was such a delight (even for those kiddos!)  My kids were super skeptical when they saw it… I mean, who wants to eat anything GREEN? 😉  but once they tried it, they were asking for seconds.

This recipe also includes jalapeños, however you can omit those since they are what really make this spicy.

Everything else was mostly for flavor and color.  This recipe also calls for fish sauce, which really helps bring out the flavor.

Scale
  • 3 lbs bone-in chicken thighs
  • 4–5 tomatillos, quartered, husks discarded
  • 3 poblano peppers, roughly chopped, seeds and stems discarded
  • 2 Anaheim Peppers roughly chopped, seeds and stems discarded
  • 2 Serrano or jalapeño chilies roughly chopped, seeds and stems discarded (optional)
  • 1 medium onion
  • 6 garlic cloves, peeled
  • 1 tablespoon cumin
  • 1 bunch cilantro
  • 1 tablespoon fish sauce

Instructions

  1. Turn the Saute function on and saute all ingredients for about 3 minutes or until chicken is slightly seared.
  2. Turn on high pressure for 15 minutes.
  3. Quick release pressure and remove just the chicken.
  4. Use a hand blender to blend and season with salt.
  5. Add chicken back to pot and shred.
  6. Enjoy with corn tortillas or eat as is.

Last weekend I decided to pick up a whole chicken at the store so I could see How To Cook a Whole Chicken in a Pressure Cooker.  We also ate this with a side of cauliflower mash (which was soooo good!).  If you love a juicy chicken this is UHMAZING!

I was kind of skeptical that it was going to fit but it did! Here is how I cooked a whole chicken in the pressure cooker: (We use the Instant Pot IP-DUO60 7-in-1 Programmable Pressure Cooker 6Qt/1000W, Stainless Steel Cooking Pot and Exterior)

How to Cook a Whole Chicken in a Pressure Cooker

We started with adding carrots, celery, and onion to the bottom of the pot, but if you want to have crunchy veggies to eat, you may not want to do this.  Our veggies came out really soggy and not really edible but you might not mind this.  We didn’t really care for it and no one ate it.  However, we did have a nice little broth at the bottom of the pot that you can save for cooking your cauliflower mash. 😉

Add one cup of water to the bottom of your cooker and season the chicken with salt and pepper or whatever else you would like.

Cook on high pressure for 20 minutes and quick release.

  • 1 Chicken
  • Salt
  • Pepper
  • Water

Instructions

  1. Chop celery, onion and carrots and add to the pressure cooker (if you are using them)
  2. Add one cup of water to the pot
  3. If you aren’t using the celery, onion, or carrots add the rack that came with your pressure cooker to the bottom and place the seasoned chicken on top
  4. Cook on high pressure for 20 minutes
  5. Quick release pressure
  6. Serve with potatoes or veggies
  • Prep Time: 5 mins
  • Cook Time: 20 mins
