Easy Instant Pot Au Gratin Potatoes are easy, cheesy and delicious! I absolutely love how much time is saved by making these cheesy potatoes in my Instant Pot!

My husband is the KING of Au Gratin potatoes at our house. He’s an amazing cook and I rarely dislike anything he makes, but when he makes cheesy, delicious Au Gratin Potatoes… I’m full-on drooling!

However, Au Gratin potatoes take a long time to cook. He usually bakes them for at least an hour and by the time you add in peeling, slicing and all that jazz, they’re not a fast dish.

Until now.

Recently, on a night when I was cooking instead of Richy, I decided to try my hand at Au Gratin potatoes. But since I was short on time, I figured out a way to do them in the Instant Pot.

This cut my cook time down dramatically and while they weren’t as amazing as my husband’s homemade, from-scratch, full-on version… these were really delicious!

Easy Instant Pot Au Gratin Potatoes

Easy Instant Pot Au Gratin Potatoes ingredients

Here’s what you’ll need:

  • 3 pounds potatoes, peeled and sliced evenly (about 1/4 inch slices)
  • 1 cup water
  • 1 teaspoon salt, divided
  • 1/4 teaspoon white or black pepper (or both… we love both!)
  • 2 tablespoons salted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk (we use whole)
  • 2 1/2 cups shredded sharp cheddar cheese, divided

First, mix together the water and 1/2 teaspoon of salt and add to the pressure cooker pot. Then add the peeled, sliced potatoes.

For slicing the potatoes, I cannot recommend highly enough getting a mandoline. I bought my hubby one a few years ago and it’s one of his most favorite kitchen tools!

You get perfect slices, every time and SUPER fast! We use it several times a week for potatoes, onions, tomatoes, carrots, cheese, and more! Check out the one we have here.

Anywho… after you add the potatoes, salt and water – set your Instant Pot to manual and cook for 1 minute.

While the potatoes are cooking, you’ll make the cheese sauce on your cooktop. Melt the butter in a saucepan over medium heat. Stir in flour, remaining salt and pepper. Cook for a minute, then add the milk and bring to a boil.

Mix in two cups of the cheese and remove from heat; stir until completely melted and combined.

After the potatoes are done, quick-release the pressure, then prepare a baking dish with nonstick spray. Layer the potatoes with the cheese sauce in the dish.

Top with remaining cheese and place under a broiler for 2-3 minutes until the cheese is melted and golden brown!

Description

Instant Pot Au Gratin Potatoes are easy, cheesy and delicious! I absolutely love how much time is saved by making these cheesy potatoes in my Instant Pot!


Ingredients

Scale
  • 3 pounds potatoes, peeled and sliced evenly (about ¼ inch slices)
  • 1 cup water
  • 1 teaspoon salt, divided
  • ¼ teaspoon white or black pepper
  • 2 tablespoons butter
  • 1/4 cup flour
  • 1 cup milk
  • 2 ½ cups shredded sharp cheddar cheese, divided

Instructions

  1. Mix together water and ½ teaspoon salt.
  2. To the electric pressure cooker, add the salt water and then sliced potatoes. Program the electric pressure cooker to cook on “manual” or “pressure cook” for 1 minute.
  3. Meanwhile, prepare the cheese sauce by melting the butter in a medium saucepan over medium heat. Stir in flour, remaining salt and pepper. Cook for 1 minute. Add milk all at once and continue stirring until the mixture comes to a boil. Mix in 2 cups of cheese and remove from heat. The sauce will continue to thicken as it rests.
  4. Preheat the oven broiler. Prepare a 9×9 square baking dish with nonstick cooking spray.
  5. When the electric pressure cooker cycle is complete, perform a quick pressure release. Carefully remove potatoes and layer with cheese sauce in baking dish.
  6. Cover the casserole with remaining cheese, if desired. Place under the broiler for 2 to 3 minutes or until the cheese has melted.

Instant Pot Goulash

This classic Instant Pot Goulash is one of those one-pot meals that I will be making again and again! It’s hearty, easy, filling and delicious!!  When trying to describe it – it falls somewhere along the lines of a little bit like chili and a little bit like spaghetti or maybe like a chili-mac?  No matter what you call it, it’s just so, so good.

I’m gonna fess-up and tell you – I’ve never had goulash before. But when I saw a version of this on Pinterest, it called out to me. I love one-pot meals and casseroles. We’re big fans of anything that’s easy, fast, filling and good.  And the “good” part is most important! So we made it…

Also, my kids are not super picky eaters but they don’t mind calling out a bad dish when I make one either.  This Instant Pot Goulash, they decided, is not a bad dish!  As the weather starts to cool off, I know I’ll be making this again and again!

By the way, in my googling and researching to write this post, it came to my attention that this dish is also called Johnny Marzetti, or American Chop Suey.  I’ve never heard of either in my 43 years, but that’s okay. I like to learn something new every day!

Oh – there’s also Hungarian Goulash.  That’s not what this is… this is American Goulash I guess?  Made even more American because it’s made in the Instant Pot.

Alrighty, so what’s in this Instant Pot Goulash (for those of you unfamiliar, like me)?  It’s got ground beef, noodles, tomato products, spices, and cheese. I mean – these are staple ingredients in most of our kitchens, right?

I was so happy and surprised to see that I already had everything I needed the first time I decided to make this!  Also – it only takes 1 minute of cook time once you have it all in the Instant Pot. You cannot beat that!

Instant Pot Goulash

Description

This classic Instant Pot Goulash is one of those one-pot meals that I will be making again and again! It’s hearty, easy, filling and delicious!!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 pounds lean ground beef
  • 1 medium sweet onion, finely diced
  • 1 tablespoon minced garlic (about 3 cloves)
  • 3 cups of water
  • 1 teaspoon Better than Bouillon, Beef Flavored*
  • (2) 15-ounce cans tomato sauce
  • (2) 15-ounce cans diced fire-roasted tomatoes
  • 3 bay leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon Italian seasoning
  • 1 tablespoon oregano
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese

Instructions

  1. Set the Instant Pot to sauté. When hot, add the olive oil, onion, and garlic and cook for 3 to 4 minutes or until the veggies are tender. Then add the ground beef and brown it. When it’s cooked, drain off the excess water/oil.
  2. Add the water, Better than Bouillon, tomato sauce, canned tomatoes, bay leaves, soy sauce, and the remaining seasonings. Stir well. Then stir in the elbow pasta.
  3. Put on the lid, set to sealing position, and cook on high pressure for 1 minute.
  4. Quick release the pressure when the time is up.
  5. Carefully remove the lid, remove the bay leaves, and stir. Do not leave on the “Keep Warm” setting or the pasta will get mushy.
  6. Top with shredded cheddar cheese and enjoy!

Notes

* You could skip this ingredient if you like, or substitute 1 cup of beef broth for one of the cups of water.

These Easy Instant Pot Spaghetti & Meatballs are one of those shortcut recipes that maybe even shouldn’t be called a “recipe”.

It’s a matter of taking pantry/freezer ingredients and combining them to have a meal ready in under 30 minutes!  Oh – and it’s a winner with the whole family!

Just to clarify before we get too far into things… I did not cook the spaghetti noodles in the Instant Pot. I have two Instant Pots so I could have, but I figured the average family doesn’t, so I tried to keep it real for the average family.

And yes, there are recipes where the pasta is cooked in the sauce in the Instant Pot. But I haven’t tried that for this particular recipe, so I’m sharing what I did.

Frozen meatballs. Jarred spaghetti sauce. And noodles cooked the traditional way (in a pot of boiling water).  We’re pretty loyal to Barilla for our pasta sauce (when I don’t make it homemade) and noodles.

This is one of the recipes that was a g0-to during our kitchen renovation. We had no stove, no oven, no dishwasher, no sink… bleh. It was challenging. But I had a table set up with an electric countertop burner and my Instant Pot and that’s how we cooked for almost 2 months.  Oh and a microwave… thank goodness.

Anyway, here’s what you’ll need:

Except probably half of what I used (remember – I have 6 kids ?). So where you see giant bag of meatballs and two boxes of pasta and two jars of sauce… I’m writing the recipe using half that.

  • (24 oz.) jar of spaghetti sauce
  • 1 cup water
  • (32 oz.) bag of frozen meatballs
  • 16 oz. spaghetti noodles
  • water and salt to cook the noodles according to package directions

Easy Instant Pot Spaghetti & Meatballs

So here’s what you do…

  1. Pour the spaghetti sauce and 1 cup of water into your Instant Pot. Stir.  Pour in the meatballs and stir again until they’re all coated.
  2. Then you’ll lock the lid and set the vent to “Sealed”.
  3. Set to manual pressure for 10 minutes.*
  4. After it beeps, you can quick release and the sauce and meatballs are ready to eat!
  5. While the Instant Pot is doing it’s thing, cook the noodles according to package directions.  I use a big pot, lots of water and a generous palm-ful of salt.
  6. Last, serve the sauce and meatballs over noodles and enjoy!!

Note… we always add some fresh shaved parmesan… oh-so-good!

Instant Pot Mango Pineapple Chicken

When I bought Pressure Cooker Meals (this website), my goal was to work through all of the recipes and rewrite them in my voice.  Since this Instant Pot Mango Pineapple Chicken was the second most popular recipe on the blog, it was high on my list of recipes to rewrite.

Having never had Instant Pot Mango Pineapple Chicken, I knew I had to make it to write about it ?

I’m happy to report that my family loved this dish!  All of my kids (and the hubby) love pineapple and most of the kids love mango, so I knew there was a good chance they’d like this.

It’s sweet and tangy and mild enough for everyone to enjoy (although personally, I wouldn’t mind if it had a little more kick).

Does your family do Taco Tuesdays?  We do!

And Taco Wednesday and Taco Friday and pretty much Tacos-Any-Day-of-the-Week.  Haha!  But nevermind that. I have a fun round-up for you today of 10+ Taco Tuesday Instant Pot Recipes!

We love Mexican food.  We have Tacos or Enchiladas or Taco Soup or Burritos at least once a week. Sometimes more often.

This is totally unrelated, but last summer my daughter Sarah and I went to Mexico to build a house with a missions team. And for the first time in my life, I had legit, real Mexican food.

Good grief it was good!   This one one of our meals:

That night we had Steak Carnitas, fresh Pico de Gallo, the best rice and beans I’ve ever had… and grilled cactus. Well, I didn’t love the grilled cactus, but you know – you can’t win them all!

Eating that authentic food made me want to try harder when cooking Mexican food.  Which is why I’m excited to try some new-to-me recipes below and see if any of them come close to the real deal.

So… back to Taco Tuesday.  With a big family I’m always looking for the easy meal that comes together quickly. And almost all Mexican food fits the bill.  Plus, it’s a meal that gets my kids to eat fresh veggies (hello lettuce, tomato and fresh salsa). That’s always a win!

So today I’m super excited to share a whole list of “Taco Tuesday” recipes with you that you can make in your Instant Pot.

Instant Pot Taco Soup

This Instant Pot Taco Soup is loaded with your favorite Mexican flavors, lots of texture and it’s very filling! It’s the perfect solution when you need an easy, delicious weeknight meal!  

This is the exact same recipe that I use to make traditional Taco Soup – except I’m doing it in my Instant Pot, so it’s Instant Pot Taco Soup.  I’m brilliant, right?

Anyway, with canned beans and frozen corn, this soup is incredibly easy to make and oh-so-delicious!

Instant Pot Taco Soup

Here’s what you’ll need:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 can of whole kernal corn (you can also use 1 cup of frozen corn or 1 cup of fresh corn, cut off the cob)
  • 1 can Rotel tomatoes (or 1 cup of fresh or frozen diced tomatoes + 1 small can of diced green chiles)
  • 1 can kidney (red) beans (or 1 cup)
  • 1 can great northern (white) beans (or 1 cup)
  • 1 can black beans (or 1 cup)
  • 1 pkg. dry taco seasoning mix
  • 1 pack dry ranch dressing mix
  • Add 2 cups water

Instructions…

Start by turning your pressure cooker on saute. When it’s hot, add the ground beef and chopped onion.  Cook until the beef is browned and the onions are soft.  Drain.

Then add the ground beef and onions back to the pot, along with the corn, Rotel, beans, taco seasoning mix, ranch dressing mix and water.

Place the lid on your Instant Pot and set it to “Sealed.”

Press the “Soup” button, or use the “Manual” button and set the timer to 20 minutes.

Once it beeps, do a “Quick Release” and your soup is ready to eat!

Serve with corn chips or tortilla chips, corn bread, shredded cheese, sour cream, and whatever else makes you happy!

Our family is split.. we all eat our Instant Pot Taco Soup with tortilla chips, but half do sour cream and the other half only does shredded cheddar!

And that’s it!  It’s so, so easy!

Substitutions.

In the list of ingredients, I listed a few substitutions but I wanted to really highlight those here.

You can use canned beans or you can prep beans ahead of time and use them from your freezer.  You can also substitute whatever beans you have on hand or prefer.  Use all the same kind of mixture like the recipe lists. I have used pinto beans, red beans, white beans, navy beans, and/or black beans depending on what I had on hand.

I also often cook big pots of beans in my Instant Pot, let them cool, then dip them into freezer bags to have on hand for chili or taco soup. Frozen in 1 cup portions, they’re ready to go when needed.

I do something similiar with ground beef.  I’ll buy 3-4 pounds, cook it all at once, then portion it out and freeze it.  When I do that, I can skip the first few steps of this recipe and just add the pre-cooked ground beef along with uncooked diced onion to the pot with all the other ingredients.  Then I have supper ready in no time!

This Instant Pot Beef & Veggies over Rice (Homemade Chinese Food) is an Asian-inspired dish that has everything you need for a filling dinner: beef, rice, vegetables and a delicious sauce!  It’s all the good stuff you love about Chinese food made easily at home in your Instant Pot!

For years now we’ve lived back in my tiny hometown where Chinese take-out is not an option. But we seriously love our Chinese food, so I had to find a way for us to enjoy it more often at home.  Years ago I came up with this recipe that I make in my Crock Pot.

It’s perfect and delicious and always a hit with every member of my family.  But recently I decided I wanted to make a faster version – in my Instant Pot!  So with minimal changes, I’m finally ready to share this Instant Pot Beef & Veggies over Rice (Homemade Chinese Food).

The best part of making Chinese food at home is knowing exactly what you’re eating and being able to customize it for your family.  For instance, we love water chestnuts so I always add a can of sliced water chestnuts to our frozen veggies mix.  Sometimes we also buy cans of baby corn – a favorite for my youngest son.

I also avoid buying the mixes that are heavy on the peppers and mushrooms because they’re not a family favorite.

The cool thing is – this is a dish that all of my kids will eat (including tons of vegetables) without any complaints!  That’s HUGE for my big family 🙂

You could also do this recipe with just broccoli and it would be very similar to another popular Chinese dish, Beef & Broccoli.

Description

This Instant Pot Beef & Veggies over Rice (Homemade Chinese Food) is an Asian-inspired dish that has everything you need for a filling dinner : beef, rice, vegetables and a delicious sauce!  It’s all the good stuff you love about Chinese food made easily at home in your Instant Pot!


Ingredients

Scale
  • 3 lb. boneless beef chuck roast, sliced into thin strips*
  • 2 cups beef broth
  • ¾ cup soy sauce
  • ½ cup brown sugar
  • 1 Tbsp. sesame oil
  • 3 garlic cloves, minced
  • 2 Tbsp. olive oil
  • 3 Tbsp. cornstarch
  • 3 Tbsp. water
  • 5 cups Frozen Oriental Vegetable Mix (or you can mix up your own – we like broccoli, carrots, baby corn, water chestnuts and snow peas)
  • Sesame Seeds (optional)
  • Cooked White Rice (I cook 4 cups for our big family)

Instructions

Mix up the beef broth, soy sauce, brown sugar, sesame oil and garlic in a bowl and then pour over the sliced beef.  Allow it to marinate for at least 15 minutes.

Turn you Instant Pot on “Saute and add the olive oil.  When it reads “Hot”, it’s ready.  In batches (3 or 4), saute the beef and lightly brown on each side (about 1 minute per side).  Set the meat aside until it’s all cooked, then add it back to the pot.

Pour the marinade over the top.  Place the lid on top and set it to “Seal”

Press “Manual” then set the time to 7 minutes.

Once it’s done, quick release the pressure and carefully remove the lid.

In a small bowl, whisk together the corn starch and water.  Turn the Instant Pot back to “Saute” and when the sauce begins to boil, add the cornstarch mixture and stir.  The liquid will thicken in 1-2 minutes.

Add the vegetables into the pot and stir to coat.  Then place the lid back on, and cook on “Saute” for another 5-6 minutes.

Sprinkle with sesame seeds (if desired) and serve over rice.

Notes

*I have also used round steak with great results

Instant Pot Chicken Alfredo

Dry pasta in a pot?  Sounds crazy, right?  Let me assure you that this Instant Pot Chicken Alfredo is sooooo easy and it cooks the pasta a perfect al dente!  It was a winner for my kiddos, because they ate it all up.  Can we say WINNING!?

This recipe really is oh-so easy and delicious.  I also love that I don’t have to mess up a ton of dishes to make a filling meal for my family.  We add some toasted garlic bread and maybe a salad and call it a meal!

Here are the easy-peasy ingredients:

  • 1.5 – 2 pounds of chicken breast, chopped
  • 1 (22 oz) jar of alfredo sauce
  • 1 pound pasta, broken
  • 2 Tbsp oil
  • 2 Tbsp minced garlic
  • dash of pepper
  • 2 cups water
  • parmesan for garnish (optional)

A few pointers… to make the chicken cook faster, cut it into bite-size (or a little larger) chunks.

To cook it, add a little oil to your Instant Pot and turn it on “Saute.”  Let the oil get hot, then add in the chicken. Cook all the way through (stirring as needed).

This gives the chicken some extra color and flavor when it is a little seared on all sides.

When it’s done, add all of the other ingredients to the pot and stir. Make sure the pasta is broken into smaller pieces and completely covered in liquid (as best you can). Stir to separate the pasta so it doesn’t cook in one large clump.

Cook on high pressure for 5 minutes – then quick release.  Serve with shredded parmesan and man, oh, man – it’s delish!!

Breakfast is so important for a great day, and this Instant Pot Breakfast Casserole with Ham and Egg is a favorite option in our house.  It comes together easily, cooks while we get ready for the day, and is satisfying for hours.  A hearty breakfast is a must with a house full of kids, and this one makes everybody happy.

Instant Pot Breakfast Casserole with Ham and Egg

My 11 year old son actually made this the day I took pics. He’d been begging to make a special recipe for breakfast, so I encouraged him to try this one.

But I have to tell you, the first time around, we thought the recipe was a bust. After taking a bite, I realized why… he forgot he hashbrowns!  There is way too much seasoning in this casserole to skip a main ingredient!

However, after pointing out his mistake, he immediately jumped up and made another batch.  The second time, the recipe was a hit!

And I love that all of the ingredients are staples in our home, so this was easy to pull together without going shopping!

To make this Instant Pot Breakfast Casserole, you need a few ingredients and supplies.

First up, you’ll need a dish that fits inside your Instant Pot. I use a simple 7 cup round Pyrex dish (this one fits perfectly in the Instant Pot).  I’m sure there are other options but I bought a set of 4 of those so I’d always have one ready to go!

Also, you’ll need a trivet for placing the bowl inside your pot.  Some use an aluminum foil sling, but I prefer using the trivet that has handles. Another option would be to use a bowl small enough for you to easily remove it with silicone pot holders.

This Instant Pot breakfast casserole is going to be a favorite option for weekend breakfast.  Serve with a side of fresh fruit and you have a complete breakfast the entire family will enjoy.  It’s even a perfect way to use up leftover ham after the holidays!

Ingredients

6 eggs

1 cup chopped ham

2 cups frozen hash browns

1 cup cheddar cheese, shredded and divided

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon black pepper

1 teaspoon salt

1 cup water


Instructions

Directions for Instant Pot Breakfast Casserole

First, spray your cooking dish with non-stick spray

In a large bowl, whisk eggs, onion powder, garlic powder, black pepper, and salt.

Mix ham, hash browns, and 1/2 cheese into egg mixture until well combined.

Next you’ll pour the mixture into the prepared bowl.

Top with remaining cheese.

Pour water into the bottom of Instant Pot insert and place trivet into the pot.

Place your casserole dish into Instant Pot and set on top of the trivet.

Place the lid on the Instant Pot and set to seal.

Set to manual for 15 minutes.

Allow to NPR (natural pressure release) for 5 minutes.

Remove from Instant Pot carefully (use silicone mitts if needed) and serve.

If you’d like to brown the casserole a little, place it in your oven under broil for about 3 minutes to get a brown topping!

Notes

My family loved this as written, but if I were making it just for me, I’d cut back on the onion powder.

Pressure Cooker Chicken Spaghetti Recipe

While this Instant Pot Chicken Spaghetti comes together in minutes, you’ll be able to easily whip up a side salad, dessert, or even some yummy garlic toast to serve on the side.  No matter what you serve with this chicken spaghetti, this is a delicious meal everyone will love!

Ingredients for Chicken Spaghetti:

1 pound boneless skinless chicken breasts

2 cups chicken stock

2 cups diced tomatoes

1 8 oz can diced green chiles

1 tablespoon cumin

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon black pepper

8 oz cream cheese

2 cups sharp cheddar cheese, shredded

1 cup pepper jack, shredded

1 8 oz package thin spaghetti

Directions for Chicken Spaghetti:

In Instant Pot, add chicken stock, chicken, tomatoes, green chiles, cumin, garlic powder, onion powder, paprika, and black pepper.

Place lid on Instant Pot and set to seal.

Cook on Manual High heat for 15 minutes.

Another great recipe for your Instant Pot is this classic comfort food, Pressure Cooker Roast Beef & Vegetables.  There is nothing more satisfying than the classic Sunday dinner meal of a pot roast.  The problem for a modern day mother is that waiting 4-6 hours for that roast beef to finish cooking in the oven or slow cooker just doesn’t work for our busy schedules.  The solution?  Making this delicious pressure cooker roast instead!

Use this recipe as a great guide for your favorite cuts of beef or for a pork shoulder.  This Pressure Cooker Roast Beef & Vegetables Recipe is sure to become one of your go-to meals that satisfy the whole family.

Pressure Cooker Roast Beef & Vegetables

I made this pressure cooker roast in my Instant Pot in just an hour.  It was chock full of flavor, tender, moist, and so easy.  I especially love the fact that I could make this as a last minute dinner.  No need to wait all day to enjoy one of the best comfort food recipes. I prefer using a chuck roast, but this would work with any larger cut of meat.  You may also use a similar method with a pork loin.

Ingredients for Pressure Cooker Roast In Instant Pot: 

3-4 pound chuck roast

1 onion, diced

1 small bag baby carrots

2 pounds red potatoes

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon paprika

1 tablespoon olive oil

1/4 cup Worcestershire Sauce

1/2 cup Red Wine

1 cup beef broth

Directions For Pressure Cooker Roast in Instant Pot: 

Peel and rough dice the onion.  Rinse carrots and potatoes well and set aside.  In a small bowl, mix together salt, pepper, onion powder, and paprika.

Set your Instant Pot to “Saute,” and pour olive oil into the pot.  Sprinkle seasoning over both sides of roast, and place it into your Instant Pot.  Sear on all sides.  This usually takes 1-2 minutes per side.  Press “Cancel” to turn off the “Saute” feature.

Pour red wine and Worcestershire sauce over the roast.  Layer the onion, potato, and baby carrots on top of and around the roast and cover with 1 cup beef broth.

Place the lid onto the Instant Pot and set to seal.  Choose the “Meat” option and set to 45 minutes.  When the timer is done, allow to natural release pressure.  Remove the lid, and serve.

You may reserve the liquid and make a gravy by simply turning the “Saute” feature back on and adding 1 tablespoon cornstarch to the mix and whisking well until thickened.  Adjust salt and pepper to taste as needed.

Cheesy pasta is one of those things that everyone loves.  It’s a comfort food item that kids are going to beg for, and honestly, since you can so easily use lower fat items, it can be a healthy choice for adults.  While this recipe contains ground meat, you could make it without and simply add more vegetables.

Ingredients For Instant Pot Cheesy Pasta: 

1 pound lean ground beef (can substitute chicken, turkey, pork, or sausage if preferred)

1 tablespoon olive oil

1 package penne or large noodle pasta

1 bell pepper, diced

1 onion, diced

1 tomato, diced

3 cloves garlic, minced

2 jars marinara sauce

1 cup red wine

1 teaspoon oregano

1 teaspoon basil

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon black pepper

16 oz. cottage cheese

1 cup shredded mozzarella cheese

Directions for Instant Pot Cheesy Pasta: 

Turn your Instant Pot to “Saute” and add the ground meat, stirring occasionally to cook until no longer pink, approximately 5 minutes.  Add in the bell pepper, onions, and garlic and cook for an additional 2-3 minutes or until vegetables begin to become tender.

Turn off the Instant Pot and mix in tomatoes, seasonings, marinara sauce, and wine, then set it to “Manual” and adjust to 15 minutes.  Add the lid and set to seal.

Whether you are looking for an inexpensive meal for your family, or you are longing for a bit of Cajun flavor, this is a great recipe.  It takes just a few minutes to prep, and is ready in under an hour.  That’s my kind of dish!

Ingredients For Instant Pot Red Beans & Rice: 

1 pound Andouille or Kielbasa sausage (pork & beef or turkey – use whatever you prefer)

1 medium onion, diced

1/2 cup red wine

1 tablespoon butter

1 cup dry kidney beans (or pinto beans)

3 1/2 cups broth (beef broth is richer, but any broth or even water works)

2 cups instant brown rice

Ingredients for Homemade Cajun Seasoning: 

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

2 teaspoon onion powder

1 teaspoon thyme

1 teaspoon red pepper flakes

In a world that is always rushing, ways to save time are on every mind.  Using your Instant Pot for meal planning is just another amazing option this product gives you.  Meal planning has always been a favorite way for me to save time and money in our busy lives, so combining both the ease of the Instant Pot and the effectiveness of meal planning is a given.  So here are 4 Tips For Using Your Instant Pot For Meal Planning.

1. Learn how to use your Instant Pot first.  One thing I have to say is that an Instant Pot has a little bit of a learning curve.  It is easy to use, and the instructions and recipes that come with it upon purchase take the guess work out of using it regularly.  However, it isn’t something you want to just jump into with meal planning without a few trial runs first. 

Practice a few basic recipes before you really begin your meal planning.  For me, meal planning is about things being easy to assemble and know in advance what I need to shop for.  So, if I am uncertain about cook times, amounts of liquid, or if a dish will also need to be browned in the oven, I don’t really feel like the meal plan is helpful.  That’s why you need to do some practice before you put it into full time meal planning use.

Start with your family favorites and learn how to properly make them using the Instant Pot.  While many favorite recipes will be identical, there are others that are slightly different in the amount of liquid needed to properly cook in this pressure system.

2. Utilize your Instant Pot for batch cooking. Many people have adapted a method of batch preparing foods to have on hand for easy meal preparation throughout the week.  Things like cooked rice, potatoes, beans, and proteins of all kinds can be portioned and frozen in advance.  Then you simply pull out a container (or two if needed) of what you will use in your recipe, thaw and mix things together. 

This method of using your Instant Pot is a great tip for those who prefer a bigger variety of meals throughout the month, but still want to cut back on time in the kitchen.  They might decide last minute that they want to make a hamburger or sausage pizza.  Having the meat already cooked and portioned cuts cooking time in half.  All you have to do is pull it from the freezer, defrost, and top your pizza.  The same goes for things like making tacos, spaghetti, chicken salad, and other various casseroles. 

For someone who has always been afraid of batch cooking because of the time involved, an Instant Pot makes it 100% easier to manage.  You can easily cook large batches of pot roast, chicken, hamburger, pork chops, beans, and rice in under 30 minutes each.  This results in less time in the kitchen, and tons of meals on hand for your family.

3. Prep ingredients ahead. If you are a fan of freezer meals that allow you to dump the ingredients from a freezer container or freezer storage bag into a slow cooker, you can use the same methods for your Instant Pot!  While you may need to adjust the amount of water you use in some of these recipes, you’ll be able to throw them together and add to your freezer for easy “dump” meals that will save tons of time.

One huge bonus about doing this and using your Instant Pot is the fact that you don’t have to worry about thawing that package overnight like you would if using a slow cooker method.  Instead, you just toss the ingredients, still frozen, into your Instant Pot and cook according to directions.

4. Use the accessories. Buying an Instant Pot doesn’t mean you just get a pressure cooking device.  It also means you have a yogurt maker, vegetable steamer, rice cooker, and large stockpot.  There are so many different uses for your Instant Pot, and even more accessories to use that will offer you more options for meals.  Instead of sticking with the basics, take the time to experiment with your accessories.  They can not only make your Instant Pot even more useful, but they can save you time and money. 

These tips for using your Instant Pot for meal planning are going to make it even easier to manage staying inside your budget each month.  They will also make cooking for your family something you enjoy doing, instead of dread.

Have you ever had Seafood Pho? Or any kind of Pho for that matter?  If you don’t know what it is– think of a bowl of ramen soup, that has a ton of veggies and whatever type of protein that you would like.  Instead of seafood, you can have chicken or beef instead. This is just what our family loves and I wanted to share how easy it is to make your own Instant Pot Seafood Pho.

In order to make a good pho, the flavor is in the broth and as you know– broth can usually take an entire day to be filled with the flavorful goodness that you will want.  However, with the pressure cooker you can have this in less than 2 hours!!

I highly suggest visiting a Asian food market for the chicken feet and white fish bones (any white fish is good.)

Instant Pot Seafood Pho

The easy part: Take all of the ingredients and throw them into the pot!  This part is simply making the broth, which is all you will use for the soup.

You don’t have to use seafood.  You could replace the seafood with chicken or beef.  If you decide to use chicken, I would cook it with the broth and make sure to cut up the breast into large pieces.  (You could also cook it separately, it doesn’t matter.)  If you want beef, slices of beef chuck is best for pho.  I would cook it separately from the broth so you don’t over cook it.

As far as the veggies, I would cook them to your liking.  We usually just blanch the bok choy and squid together– they only need a short couple of minutes in hot water to eat.

Instructions

  1. Add all broth ingredients to the pressure cooker
  2. Fill with Water until the Max Line
  3. Set on High Pressure for 60 minutes, manually release the air for 30 minutes
  4. After the cooking process is done, take out all of remaining whole pieces of the broth ingredients until only liquid is left.
  5. Add whatever soup ingredients you want to a bowl then add the broth and enjoy!

Chili Verde in the Pressure Cooker

This simple Chili Verde in the Pressure Cooker was such a delight (even for those kiddos!)  My kids were super skeptical when they saw it… I mean, who wants to eat anything GREEN? 😉  but once they tried it, they were asking for seconds.

This recipe also includes jalapeños, however you can omit those since they are what really make this spicy.

Everything else was mostly for flavor and color.  This recipe also calls for fish sauce, which really helps bring out the flavor.

Ingredients

Scale
  • 3 lbs bone-in chicken thighs
  • 4–5 tomatillos, quartered, husks discarded
  • 3 poblano peppers, roughly chopped, seeds and stems discarded
  • 2 Anaheim Peppers roughly chopped, seeds and stems discarded
  • 2 Serrano or jalapeño chilies roughly chopped, seeds and stems discarded (optional)
  • 1 medium onion
  • 6 garlic cloves, peeled
  • 1 tablespoon cumin
  • 1 bunch cilantro
  • 1 tablespoon fish sauce

Instructions

  1. Turn the Saute function on and saute all ingredients for about 3 minutes or until chicken is slightly seared.
  2. Turn on high pressure for 15 minutes.
  3. Quick release pressure and remove just the chicken.
  4. Use a hand blender to blend and season with salt.
  5. Add chicken back to pot and shred.
  6. Enjoy with corn tortillas or eat as is.
