Instant Pot Corn on the Cob (Fresh or Frozen!)

January 5, 2021 by Rose Atwater Leave a Comment

Instant Pot Corn on the Cob is SO easy and delicious! There’s nothing better than fresh sweet corn dripping with melted butter and salt in the summer time. This is a side dish that goes well with almost any meal and it’s never been easier than in your pressure cooker.

Instant Pot Corn on the Cob

My baby boy (a term I use lightly since he’ll be 10 years old this month) loves yellow and orange foods. He actually has never said that; it’s just an observation that my husband and I have made.

His favorite foods are mac & cheese (or any kind of pasta really), popcorn (buttered!), carrots, french fries (do they qualify as yellow?), and cheese dip. I’m not sure he’s even aware that he always wants food in this color range, but he does. Daily.

Anyway… last year a friend of the family gave us a 50-gallon trash bag full of fresh-picked sweet corn. They’d already put up all the corn they could possibly use for a year so they were sharing with anyone who wanted some.

We happily took a bag and added some to our freezer. But we also wanted to cook some right away and enjoy it fresh – when it’s best! That’s when I decided we’d try some in my Instant Pot.

And it worked like a dream. Why? Let me explain.

Instant Pot Corn on the Cob stacked on a plate

How to Choose the Best Fresh Corn

  • If you’re picking the corn yourself, look for tiny holes in the husks and avoid those ears. That means there are probably insects or worms in the corn.
  • If you’re buying fresh corn, look for bright green husks. Also, the tassels on the end should be silky and brown or golden. Not dry, fragile, or black. If the husks are dull or dark, OR the tassels are black and dry, the corn is not fresh.
  • If you’re using fresh-picked corn, it’s best to cook it or freeze it within a day or two of picking.
  • For this recipe, I used shucked corn but you can also cook it in the husk – see the tips below!

Cooking Frozen Corn in the Instant Pot

I can hear it now… someone asking, “What about frozen corn?” Yes, you can cook frozen corn in the Instant Pot. While I highly recommend fresh sweet corn (there’s just nothing better!), I understand that fresh is not always available or easy, so frozen is a great alternative.

And since we got a 50-gallon bag of corn, obviously we couldn’t eat it all while fresh, so here’s how to cook frozen corn in an Instant Pot:

  • Place the trivet in your pressure cooker, then add 1 cup of cold water.
  • Place the frozen corn cobs right on the rack, stacking them alternately, just as you do the fresh corn.
  • Seal Instant Pot and cook for 4 minutes on High Pressure.
  • Quick Release the pressure when it’s done to avoid over-cooking.

Why Cook Corn in the Instant Pot?

This may seem silly to some of you but we got a new cooktop when we remodeled our kitchen in 2019 and I hate it (but can’t really afford to replace it so soon).

It’s a smooth, touch-controlled glass-top contraption, and boiling anything on our cooktop is a nightmare. The minute one drop of water splashes out of a pot, the cooktop shuts off.

Do you know how often boiling water splashes out? A lot. And it’s so freakin’ frustrating to start a pot of water, then go do something else while I wait, only to come back and find it off and not boiling because a drop of water splashed out. Ugh!

Anyway… that’s why I love that I can now cook corn in my Instant Pot and never have to boil it again! It’s foolproof and so, so easy. Let me show you.

But first…

Tips for Instant Pot Corn on the Cob

  • If you’d like to cut the ends off your corn and cook it in the husk, you can! Just add 1 minute to your cooking time.
  • Change up your corn with toppings! Our favorite toppings are salt and butter, but you can also add parmesan, garlic, cilantro, chili powder, and/or lime juice.
  • Approximately 6 ears of corn will fit in a 6-quart Instant Pot and up to 9 ears will fit in an 8-quart Instant Pot. If the stalks are too long, trim them!
  • Quick-release the pressure as soon as the timer is done to avoid overcooking!

Now let me show you the easy-peasy steps:

Fresh corn on the cob cleaned and uncleaned next to an Instant Pot

First clean the corn and remove the silks.

Pouring water into the Instant Pot

Next, place the trivet in your Instant Pot, then pour the water in.

Fresh corn on the cob in the Instant Pot

Place the corn in the pot, alternating the directions they’re turned so that there’s some space between them.

Seal the lid closed and set to High Pressure for 2 minutes. When done cooking, quick-release the pressure.

Cooked corn on the cob in the Instant Pot

Open lid carefully and remove corn. Serve immediately with your favorite toppings!

And that’s it!! So easy and delicious! Here are some dishes that would go great with Instant Pot Corn on the Cob:

  • Instant Pot Mississippi Pot Roast
  • Instant Pot Potato Salad

Instant Pot Southern Green Beans

October 25, 2019 by Rose Atwater Leave a Comment

Instant Pot Southern Green Beans are made with fresh green beans and bacon, of course, in true Southern-style. These are a terrific side dish any day of the week and especially perfect for Thanksgiving, Christmas & New Years!

Instant Pot Southern Green Beans with bacon and onion in a white bowl on a blue placemat

My husband jokes that green beans and corn were the only two vegetables his family ever ate when he was growing up. He actually says they had three vegetables… green beans, French-style green beans, and corn. ?

Coming from a family that ate all the vegetables, I had my work cut out for me exposing him to new vegetables. Granted, I was the pickiest of my siblings so I don’t eat all the things my family eats, but I certainly ate a bigger variety than Richy did.

But in the meantime, I needed to figure out how to add a little variety to our green beans and dress them up more than just dumping a can in a pot and heating.

Instant Pot Southern Green Beans with bacon and onion in a white bowl on a blue placemat

Add bacon & onions to green beans for flavor!

One thing my family always did to add a lot of extra flavor to green beans was throw in a slice or two of bacon.  My mama would add onions too. As a young girl and teen, I didn’t appreciate the onions but now that I’m a little older, I don’t mind them so much.

Anyway, with that in mind, I’m sharing a recipe for how we ate green beans growing up.  The only thing I’m changing is that I’m making them in my Instant Pot.

Instead of having to simmer them for hours on the stove-top or bake them in the oven, cooking them in the pressure cooker dramatically reduces the cooking time.  And also? They’re still delicious!!

Looking for a recipe that’s not cooked in the Instant Pot? Check out this recipe for Old Fashioned Green Beans with Brown Sugar & Bacon. ⬅️⬅️⬅️That’s another family favorite!

Benefits of cooking green beans in your Instant Pot:

Being able to cook them in the Instant Pot has other benefits too.

  • For one, if you’re cooking a large meal for the holidays, this opens up one more burner on your stove. If you’re anything like me, oven space and cooktop space is always limited during the holidays so this is an easy way to free up some space.
  • Also, you can cook them so easily and so quickly… you can focus on other dishes that’ll need more attention.  I love it that I can literally make these at the “last minute” and have them ready in no time!

That sounds like a win-win to me!  So let’s get to it…

Instant Pot Southern Green Beans Recipe

Instant Pot Potato Salad

June 25, 2019 by Rose Atwater Leave a Comment

Instant Pot Potato Salad is so delicious and easy to make!  This is a classic potato salad with no onions or relish, although you can add either or both to make it your own! It’s cool, creamy, loaded with texture and flavor!

instant pot potato salad in white bowl with fork and no onions and no relish

First… here’s a short video for you showing how I make the potato salad:

Potato Salad is easily one of my most favorite summer dishes! But I’m pretty picky about how I make it.  I don’t like raw onions. I really don’t like celery. And while I will eat potato salad with relish, that’s not favorite thing either.

I also make two different kinds of potato salad… this recipe I’m about to share and a “Loaded Baked Potato Potato Salad” that has bacon, cheddar cheese, sour cream and more!! Doesn’t that sound terrific? Maybe I’ll share that recipe soon.

Instant Pot Potato Salad

But for now, I present to you, my classic potato salad recipe with no onions, no celery and no relish.  This is a “southern” potato salad, so I do use mayo, mustard and boiled eggs.  I heard recently that there are potato salad recipes with no mayonaise and it shocked me.

I seriously had no clue… how can it be potato salad if it doesn’t have mayo??  But after a little googling, I was convinced… there are a million ways to make potato salad without mayonaise.

Anywho, one reason I especially love making potato salad in my Instant Pot is there’s no risk over overcooking the potatos and ending up with that mushy, watery texture. By cooking in a pressure cooker, the pototoes are cooked perfectly while retaining their firmess and original texture.

You see that also in this Instant Pot Baked Potatoes post.  In fact, this recipe starts in the exact same way as that one… with boiled eggs added in.

instant pot potato salad with no onion on fork and in white bowl

Also, I can cook the eggs at the same time as the potatoes and it comes together so quickly.

One last thing – I prefer russet potatos for potato salad. But I have made this same recipe with red potatoes and with Yukon Gold or yellow potatoes as well. All varieties are delicious!!

Alrighty, let’s get down to the recipe.  You’ll need 4 pounds of potatoes, water, eggs, mayonaise, mustard (I use spicy mustard, but standard yellow works great), then salt & pepper.

Instant Pot Hard Boiled Eggs

April 13, 2019 by Rose Atwater Leave a Comment

Instant Pot Hard Boiled Eggs are one of my favorite things!  Get perfectly hard boiled eggs every time when you use this fast, reliable Instant Pot Hard Boiled Eggs recipe!

Instant Pot Hard Boiled Eggs in Instant Pot with text

With Easter just a few days away, I had to share this recipe for anyone who doesn’t know… making hard boiled eggs in your Instant pot is one of the easiest things you’ll do!  And something you’ll do over and over again!

This foolproof method works best for us and is one that is highly popular amongst those who love eggs.  We love hard boiled as in tuna salad, chopped on green salads, added to potato salad, for deviled eggs, and more!

Instant Pot Hard Boiled Eggs

This method works well no matter which Instant Pot you have.  You simply need a trivet. These eggs are ideal for eating alone, or using in deviled eggs, egg salad, or as additions to a salad or any recipe with boiled eggs as an addition.

Shop my Favorite Instant Pot Tools & Accessories…

Ingredients for Instant Pot Hard Boiled Eggs

4 – 12 eggs

1 cup water

Directions for Instant Pot Hard Boiled Eggs

Pour 1 cup water into the bottom of Instant Pot Liner

Place trivet into Instant Pot Liner.

Fresh eggs in Instant Pot for Instant Pot hard boiled eggs

Add eggs on top of trivet so that they are not touching the bottom of the liner.

Place lid on Instant Pot and set to seal.

setting timer on instant pot for instant pot hard boiled eggs

Set pot to manual for 5-7 minutes.

*Note – most recipes call for cooking only 5 minutes then allowing the pot to natural pressure release for 5 minutes.  I’ve had much more consistent success when setting my Instant Pot to 6 or 7 minutes and then doing a quick release.

This variation might be due to the size of the eggs or fresh eggs vs. store-bought. I’m not sure. For me, 7 minutes is perfect for farm fresh large eggs with a quick release. However, I encourage you to try different times to find what works best for you!

When the timer beeps, quick release the pressure then remove the eggs to a bowl for an ice bath or if you’re like me, you can chill them in the same pot.

instant pot hard boiled eggs in ice bath

Personally, I add a big cup of ice and another few cups of water to the Instant Pot liner and let them cool there.

instant pot hard boiled eggs sliced on a white plate

Peel and serve or remove to the refrigerator for later use.

Uses for Hard Boiled Eggs

You can easily make larger batches of hard boiled eggs, but this time frame and amount really seem to work the best for perfectly cooked hard boiled eggs.  These come together so fast that you can easily cook them each morning while you are serving up breakfast or getting ready for the day.  They go perfectly inside lunch boxes or hold in the refrigerator for a week.

This easy method of making Instant Pot hard boiled eggs is going to be a favorite for your time and convenience.  Whether you are doing this for daily use, or for a special event like Easter, this is an ideal recipe to keep in your cookbook.

Instant Pot Chicken Stock

March 23, 2019 by Rose Atwater Leave a Comment

Instant Pot Chicken Stock is easy to make and full of so much flavor! This homemade bone broth can be made in less than half the time of stove-top or slow cooker methods – you’ll never want to make it any other way!

homemade instant pot chicken stock in jar with veggies on table

I’m a huge advocate for not wasting. I don’t like to waste time, money, food… you get the idea.  For this reason, I’m always looking for ways to reinvent leftovers and use up produce that’s going bad.  Those ideas are what led me to sharing how to make homemade Instant Pot Chicken Stock.

For Father’s Day last year, we gave my husband this grill/smoker combo. Since buying it, we’ve grilled countless times and he’s smoked briskets, roasts and now whole chickens.

Anywho – so we had the smoked chickens (two for our large family) over the weekend and they were incredibly delicious. But at the end of the meal, I had these two carcasses and lots of skin and bits of meat leftover and I just knew I needed to get one more use out of the leftovers.

jar of easy homemade instant pot chicken stock on table with veggies

Instant Pot Chicken Stock

That’s when it occurred to me that I could use them to make homemade chicken stock. Even better… Instant Pot Chicken Stock!  I skimmed a few recipes, then dug through my refrigerator and pantry for leftoevers and ingredients that I could use for flavor.

Granted, nobody mentioned using smoked chicken for making broth but I figured I’d give it a try!  Since I had two leftover chickens, I got out both of my Instant Pots and doubled up. I plan to use some of the stock in my chicken & rice recipe tonight and freeze the rest for later.

easy homemade instant pot chicken stock in the instant pot with carrots and onions

In each pot of chicken stock, here’s what I included: the carcass and scraps of meat, skin, etc, baby carrots (that had gone soft), half an onion (also on the verge of going bad), minced garlic, a bay leaf, and some salt and pepper.

Several recipes I skimmed through also suggested celery and other herbs and spices, but I didn’t have that on hand, so I rolled with what I had.  I covered it all in water up to the fill line then used the manual setting.

The cooking times also varied from recipe to recipe… anywhere from 20 minutes to 120 minutes.  Since I wanted to use the broth that night in our supper, I settled in the middle and did 45 minutes for one pot and 60 minutes for the other. I couldn’t tell much difference in the two, but generally speaking, I imagine the longer you cook it, the better it’ll be.

collander of strained veggies from easy homemade instant pot chicken stock

Once the Instant Pot beeps and is done, allow it to natural release for at least 30 minutes.  Then you can strain it (discard all solids) and use it immediately!  Or let it cool to store in the frig for 5 days or freeze for up to 3 months.  I did leave a few bits of chicken in the pot for the chicken and rice I was making, but usually I strain it all out.

spoonful of easy homemade instant pot chicken stock

And that’s it!  Currently I use stock for homemade Chicken Dressing (think Thanksgiving), chicken & rice, chicken noodle soup, potato soup, and so much more! It’s full of flavor and cheap, cheap, cheap!  Two of my favorite things!!

jar of easy homemade instant pot chicken stock with veggies on table

How to store homemade chicken stock…

If I keep any chicken stock in the refrigerator, I usually try to use it within 3-4 days (although I think it would keep okay for up to a week). I almost always just pour it up in quart jars. I freeze the rest of the stock in small one-cup freezer containers or these larger 4 cup containters.

Instant Pot Baked Potatoes

February 4, 2019 by Rose Atwater 1 Comment

One of the things I’ve come to love the most about my Instant Pot is the option to make the most common and basic foods even easier.  For instance, Instant Pot Baked Potatoes.  Make easy, fluffy, perfect baked potatoes in your pressure cooker in half the time (or less), every time.

Instant Pot Baked Potatoes Image with Text for PInning

I know getting excited about baked potatoes probably seems a little nuts, but there is nothing more versatile, hearty and filling than a baked potato. Keep it simple with sour cream and butter for a side dish. Or load it up with broccoli, bacon, cheese, chili, seafood, and/or any number of other toppings for a complete meal.

Often I bake a few potatoes and set out toppings and we have a “potato bar” for lunch. It’s always a hit!

Anyway, baking potatoes in the oven takes at least an hour. But doing them in the Instant Pot is so easy and much faster. And if you get potatoes that are relatively the same size, you can perfect your “recipe” and get them perfect every single time without worry.

So… let me show you how easy it is.

stab potato with fork for Instant Pot Baked Potatoes

First, gather your potatoes anc scrub them clean. I prefer medium, Idaho potatoes so I can make at least one per family member (there are 8 of us).  Spread them out and poke holes in them with fork. No need to go overboard. Four or five jabs and you should be good.

You can, of course, do fewer potatoes. Or you can use larger “baking” potatoes . But if you do, you may have to adjust your cooking time by adding 2-3 more minutes.

cup of water for Instant Pot Baked Potatoes

Other than the potatoes, the only other ingredient you’ll need is one cup of water.

Place your rack in the bottom of your Instant Pot (or you could use a steamer basket), then pour the water in.

Stack the potatoes in and then put the lid on.  Lock the lid and set the vent to “Sealed”.

Press the “Manual” button, then set it for 12 minutes.*

After it beeps, let it depressurize using the natural pressure release or you can quick release after it sits for at least 10 minutes.

baked potatoes in instant pot

When you open up your Instant Pot, you’ll have perfectly “baked”, fluffy potatoes!

I like to test my potatoes by cutting into them with a butter knife to be sure they’re tender. Because I almost always use the same size potatoes, I don’t worry too much about it these days because 12 minutes is perfect for us. But if you use larger potatoes, you may have to reseal the pot and cook for another 2-3 minutes.

We served ours with butter and sour cream, salt and pepper. A steak from the grill and some broccoli and it was a delicious meal!

Instant Pot Hot Spiced Apple Cider

December 21, 2018 by Rose Atwater Leave a Comment

Instant Pot Hot Spiced Apple Cider is so easy to make and perfect for the holidays. It’s warm and spicy and great for entertaining. It also makes your house smell amazing!

For years I’ve been making a Spiced Apple Cider on my stovetop. This year I decided to dress it up a little more and make a batch in my Instant Pot.  I could not be more happy with how it turned out!

Clear glasses of Instant Pot Hot Spiced Apple Cider with cinnamon sticks and cranberries

The best part was not having to wait hours for it to simmer and the flavors to meld together.  With the Instant Pot version, it was ready in around 40 minutes.

I should note – this recipe is very forgiving and you add to or omit many of the ingredients and still have an amazing drink!

Also, I know there are versions out there that begin with lots of cut up apples and water and that is probably a more “true” apple cider. But I prefer this easy version and it’s always a hit at our parties and church events!

Here’s what you’ll need:

Instant Pot with apple juice and other ingredients for Hot Spiced Apple Cider

For my original stovetop version, I use cloves, cinnamon, allspice, nutmet and an orange. For this version, I used only cloves and cinnamon, but added cranberries and sliced lemons for a more citrus-y cider. Bother are incredibly delicious, so make it your own and don’t feel guilty if you change it up a little.

It only took me about 5 minutes to prep this recipe.  First I sliced the lemons and oranges, then tossed everything in my Instant Pot.

Clear Glasses of Instant Pot Hot Spiced Apple Cider with Cranberries and Cinnamon Sticks

Next, I set it to manual high pressure for 15 minutes and that was IT! It took around 20 minutes for the Instant Pot to seal (that may vary if your apple juice is cold – mine was at room temp).

And once it’s done, you can enjoy it immediately or let it sit on warm for as long as you like. I transferred mine to an urn with a dispenser because we were serving it at a party, but I’ve also left it in the pot before and used a ladel for serving.

Either way – you’re good to go!  Do you love apples and apple recipes? Check out this One Minute Pressure Cooker Apple Sauce!

Without any more rambling… here’s the recipe for you.

Perfect Rice in the Instant Pot

December 14, 2018 by Rose Atwater Leave a Comment

Rice is one of those things that is so easy to mess up.  It can be too sticky, too dry, too mushy, etc. But finally, I’ve gotten past all that and started making Perfect Rice in the Instant Pot.  Every.Single.Time.

I love the reliability of making rice in my Instant Pot without having to stand over the stove.  I am sure you’ll love this as well!

how to make perfect white rice in the instant pot every time white bowl of rice

When I first got married… um 20+ years ago, the only way to make rice (that I knew of) was in a pot on the stovetop.  And it was a huge pain in the you know what.

Plus, I was the master of screwing it up. I’d overcook it and it’d be mushy.  And I absolutely HATE mushy rice. Or I’d add to much water and it would boil over.

bowl of rice made in Instant Pot with spoon and hand

Then there were those really fun times when I’d accidentally look away for a second and it would be scorched.  The struggle was real.

Fast foward a few years (or more) and I got an electric rice maker. I loved that thing.  It simplified my rice making so much! It was a cheap cooker so I almost always still had hard rice on the bottom, but if I didn’t scrape the bottom, the rest of the rice was perfect every time.

But I didn’t have to sit and watch it. And I didn’t have to worry about it being mushy or boiling over. I could dump the rice and water in, press a button and walk away.  I loved that rice maker.

perfect bowl of white rice made in instant pot with spoon

As my kids got older, they would sometimes complain about washing the rice pot with the hard rice on the bottom. Yes, it was a pain. But they didn’t remember the stovetop rice days, so they had know idea how much easier life was with that rice maker.

Even if it did mean they needed a little more elbow grease to wash the pot.

bowl of white rice in front of instant pot

Fast forward to a couple of years ago when I got my first Instant Pot. My first recipe was these black eyed peas and I was hooked. Not too long after that, I stumbled onto a blog post about making rice in the Instant Pot and I knew I had to try.

Ya’ll.  Finally.  Rice Perfection.  No hard crusty bottom and no mushy rice. No boiling over… making Perfect Rice in the Instant Pot is a reality.  Every single time.

And it’s so stinking simple.

perfect white rice in instant pot

Let me interject here – I’ve only done this with white rice and parboiled rice. There’s a recipe here for brown rice, but there ends my rice expertise.

Are you ready for the ingredients?

equal bowls of rice and water for perfect rice in instant pot

Easy peasy… equal parts rice and liquid.  I’d say 99% of the time I use water, but broth also works beautifully if you want to add more flavor to your rice or use it in another recipe.  You can also throw in some salt, other seasonings, or even a few pats of butter.  Mmmmm.

For us, I usually do 4 cups of water and 4 cups of rice. Of course most families aren’t as big as ours, so smaller amounts work great too!

Okay – enough rice talk. If you need it (which you really don’t), I have the printable recipe down below for you!

Black-Eyed Peas with Bacon

Instant Pot Black-Eyed Peas

August 13, 2018 by Rose Atwater 6 Comments

Instant Pot Black-Eyed Peas was one of the first things I successfully made in my Instant Pot and got me hooked on this appliance! These peas are so easy to make and chockful of flavor!

White bowl of Instant Pot Black-Eyed Peas

We make these peas for New Year’s Day (as is tradition), but we also often make them for other meals throughout the year. One thing we do with Instant Pot Black-Eyed Peas over and over again is use them for Hoppin’ John.

I hope to share that recipe soon, but for now – I’m just gonna share the black-eyed peas!

White bowl of Instant Pot Black Eyed Peas with Bacon for New Years

Cooking times vary slightly, but you can cook almost any dry beans with this basic recipe.  Change up the flavors if you like – use broths, diced onions, garlic, other meats, etc. and the sky is the limit.

We do red beans for Red Beans & Rice, black beans for Taco Soup & Chili, pinto beans for Refried Beans and more.

Instant Pot Black-eyed Peas with Bacon

I ended up shooting these pics on New Years Day a couple of years ago.  I’d waited until the last minute to plan and prepare the traditional New Year’s Day meal and gosh, I couldnt’ have been more grateful for the option to quickly do the black-eyed peas in the Insant Pot.

A truly traditional meal should’ve also had pork and cabbage (I don’t know why – I just know that’s “the” traditional New Years Day meal) but that wasn’t happening.

Steaks were already thawed and I had cornbread dressing thawed from the freezer (also not traditional).  Oh well… it was a delicious meal and the black-eyed peas were perfection!

If this is not tradition for you, can you leave me a comment and tell me what your traditional New Years Day meal is?

Description

Easy & Delicious Instant Pot Black-Eyed Peas are perfect for New Years or any other occassion! These black-eyed peas are so easy with no worries about soaking, scorching, under-cooking, etc! And they’re delicious!

Ingredients

Scale
  • 1 pound dried black-eyed peas
  • 6.5 cups water*
  • 2 Tbsp. Better than Bouillon, chicken flavor*
  • 1/2 cup cooked, crumbled bacon (or real bacon pieces)

Instructions

  1. Add all ingredients into the Instant Pot.
  2. Close and lock the lid.
  3. Make sure the top knob is turned to “Sealing”.
  4. Press the Manual Button.
  5. Adjust “Pressure” to high (if not there already).
  6. Set for 30 minutes (using the + or – buttons) and you’re done!
  7. I let mine cook, then naturally cool (although it will keep warm until you turn it off).
  8. They were perfect – no other seasonings were needed!!
  9. *We like our black-eyed peas really soft. If you prefer them a little more firm, you might want to cook for 20 or 25 minutes vs. 30.
  10. **It will take longer than 30 minutes for them to be ready to eat because you have to wait for it to pressurize and then wait for it to depressurize, but it’s insanely faster than soaking then cooking on the stove the traditional way. I put 50 minutes total “cook time” assuming 10 minutes to reach pressure and 10 minutes too cool. Those times may vary.

Notes

  • *You could substitute chicken, beef or vegetable broth for the water & Better than Bouillon.

Instant Pot Pinto Beans are the perfect easy way to make your favorite dry bean fast! This recipe is done in an hour and a great addition to any meal!

Instant Pot Pinto Beans

May 1, 2017 by Rose Atwater 1 Comment

My Instant Pot Pinto Beans are the base of so many recipes.  I seriously love this recipe and don’t know how I made it without having these on hand all the time.  Pinto beans are a great way to add protein to many meals.  From use in soups to the easy refried beans for Taco Night, this is a great fast and easy base.

Instant Pot Pinto Beans are the perfect easy way to make your favorite dry bean fast! This recipe is done in an hour and a great addition to any meal!

Instant Pot Pinto Beans

Pinto beans are one of those items that you may have in your pantry, but rarely use the dry version.  Why?  Because it takes so long to cook them.  The thing I love is the fact that they are so affordable.  I can buy a 1 pound bag of dry pinto beans and make equivalent to 6-8 cans of beans for less than the cost of a single can.  However, the time is a frustration for busy moms.  That’s where this Instant Pot Pinto Beans recipe comes in handy.  You are going to love being able to make beans in under an hour from dry beans!

Ingredients for Instant Pot Pinto Beans:

1 pound dry pinto beans

5 cups beef broth

2 cloves garlic, minced

2 teaspoons onion powder

1 teaspoon chili powder

2 teaspoons salt

1 teaspoon black pepper

Directions for Instant Pot Pinto Beans:

Rinse and drain pinto beans removing any dirt.

Pour into Instant Pot liner and cover with beef broth, and add in the seasonings.

This basic recipe for Instant Pot Pinto Beans is ideal for a simple side dish.  Since you use basic ingredients for this recipe, that makes it super easy to adapt to any meal.  This version works great in soups, chili, or easily used as a side dish.  I also love mashing with a bit of extra garlic and a touch of salsa to make refried bean dip.  Add some taco seasoning, and you can easily use this as a protein in your next taco salad.  The possibilities are endless!

Happy Cooking!

Instant Pot Brown Rice

March 21, 2017 by Rose Atwater Leave a Comment

This Instant Pot Brown Rice recipe is one of those items that makes meal time and prepping meals in advance a thousand times easier to manage.  I love having rice on hand to go with steamed vegetables for a simple vegetarian meal.  If you are a meat eater, then it pairs beautifully with almost any entree.  I love the predictability of making it in my Instant Pot without having to stand over the stove.  I am sure you’ll love this as well.

Instant Pot Brown Rice is a great staple recipe for your kitchen. This healthy and simple recipe will revolutionize meal prep for your family!

Instant Pot Brown Rice

For this Instant Pot Brown Rice recipe, I used brown basmati rice.  You can choose any brown rice, but this is my personal favorite.  It cooks well and light, and provides individual grains instead of sticking together.  That’s a big plus in my book.  You can so easily turn this into a base for a stir-fry, for shredded beef or chicken, or as a great side when you mix in some veggies and eggs to make a “fried” rice dish.

Ingredients for Instant Pot Brown Rice:

1 tablespoon olive oil

1 cup brown rice

1 1/4 cup water

1 tablespoon soy sauce (optional for flavoring)

Directions for Instant Pot Brown Rice:

Rinse the brown rice and drain.  Add olive oil to the Instant Pot, making sure it covers and coats the bottom of the liner.  This will ensure the rice does not stick.  Add your rice, soy sauce (if desired) and water.

Place the lid onto the Instant Pot and set to seal.  Choose the “Manual” button and set to 22 minutes.  Once completed cooking, allow to naturally release pressure for 10 minutes.

Instant Pot Brown Rice is going to become one of your go-to recipes.  Make a batch of this a few times a week to add healthy options to your meal plan all week.  The key to great Instant Pot Brown Rice is to make it at a 1:1.25 ratio of rice to water.  So, if you want to make larger batches, it is easy to just increase at that ratio.  Always make sure to add a bit of olive oil to the liner to make sure your rice doesn’t stick to the bottom.  You will also want to add either rice or soy sauce to season it just a bit so it has flavor.

Happy Cooking!

Oh my word! Have you ever had Instant Pot Cauliflower Mash?  Putting cauliflower in the Instant Pot makes it so easy to make that I could eat it everyday.  Not to mention, my kids are totally fooled and think it’s mashed potatoes! 😉

Cut the entire cauliflower down and throw into the pressure cooker for 3 minutes on high pressure.  Be sure to add the rack that came with your Instant Pot first.  Fill with two cups of water.

Take the cauliflower from the Instant Pot to a food processor with 2 ounces of butter and a splash of buttermilk and process the heck out of it! 🙂  Not kidding, the more you process it… the better!

You know it’s ready when you have this very creamy consistency.  Add salt and pepper to your liking.

Easy Pressure Cooker Spaghetti Squash

February 12, 2016 by Rose Atwater 2 Comments

I love this Easy Pressure Cooker Spaghetti Squash recipe for nights that we need some healthy “noodles” in our life!

Easy Pressure Cooker Spaghetti Squash

I never really liked squash.  Then, my chef husband introduced me to spaghetti squash noodles…he threw on his amazing meatballs and I was hooked!  We were even able to trick our picky 5-year-old that they were noodles and he asked for seconds.

The only thing I don’t like about these is that they take so long in the oven.  So as you can guess, this isn’t a oven recipe for spaghetti squash. 🙂

Snip20160212_113

You will want to grab the rack that was sent to you with the Instant Pot.  Add two cups of water to the bottom of the pot and poke at least 6 holes with a fork in your squash.

easy pressure cooker spaghetti squash1

Set your pressure cooker to 16 minutes on high pressure and quick release.

(First time?! Hit the “manual” setting and it will default to 30 minutes. Use the minus button to go to 16.)

Easy pressure cooker spaghetti squash2

Cut open the squash and take out the seeds, then use a fork to scrape out the inside of the squash.  Scrape everything out until you reach the skin.  It should be very easy to scrape everything out, if not, pop it back into the pressure cooker and add a couple minutes.  Enjoy with meatballs, Easy Bolognese Sauce or just by itself!

Happy Cooking!

One Minute Pressure Cooker Applesauce

February 6, 2016 by Rose Atwater Leave a Comment

I didn’t know how easy it was to make homemade Pressure Cooker Applesauce until I decided to try it in my Instant Pot. I’m telling you, once you make your own One Minute Pressure Cooker Applesauce, you will never want to buy it at the grocery store ever again!

Pressure Cooker Applesauce

I have also been using this to trick my brain into getting rid of sugar altogether.  We use Braeburn apples and they taste so sweet!  We don’t add any sweetener to this recipe, but if you’d like it a little sweeter, try honey or Stevia.

Snip20160206_79

You can use as many apples as you want.  I usually do 6-7 at a time, and that gives me about a quart of applesauce once it is cooked. Peel, core, and cut the apples into fours.

Snip20160206_80

Put everything into the pot and top with ground cinnamon (to taste).  If you want to add a sweetener, use honey (1 tablespoon) or Stevia.

Snip20160206_81

Cook the apples on high pressure for 1 minute.  If you are new to the Instant Pot, press the “manual” button then take the time down to 1 minute by using the “-” button. The Instant Pot will begin building pressure once you stop pressing any buttons.

Snip20160206_83

The apples should be nice and soft.  This makes an immersion blender go through them easily.  Blend until you reach your desired texture.

Happy Cooking!
