Instant Pot Corn on the Cob (Fresh or Frozen!)

Instant Pot Corn on the Cob is SO easy and delicious! There’s nothing better than fresh sweet corn dripping with melted butter and salt in the summer time. This is a side dish that goes well with almost any meal and it’s never been easier than in your pressure cooker.

My baby boy (a term I use lightly since he’ll be 10 years old this month) loves yellow and orange foods. He actually has never said that; it’s just an observation that my husband and I have made.

His favorite foods are mac & cheese (or any kind of pasta really), popcorn (buttered!), carrots, french fries (do they qualify as yellow?), and cheese dip. I’m not sure he’s even aware that he always wants food in this color range, but he does. Daily.

Anyway… last year a friend of the family gave us a 50-gallon trash bag full of fresh-picked sweet corn. They’d already put up all the corn they could possibly use for a year so they were sharing with anyone who wanted some.

We happily took a bag and added some to our freezer. But we also wanted to cook some right away and enjoy it fresh – when it’s best! That’s when I decided we’d try some in my Instant Pot.

And it worked like a dream. Why? Let me explain.

How to Choose the Best Fresh Corn

  • If you’re picking the corn yourself, look for tiny holes in the husks and avoid those ears. That means there are probably insects or worms in the corn.
  • If you’re buying fresh corn, look for bright green husks. Also, the tassels on the end should be silky and brown or golden. Not dry, fragile, or black. If the husks are dull or dark, OR the tassels are black and dry, the corn is not fresh.
  • If you’re using fresh-picked corn, it’s best to cook it or freeze it within a day or two of picking.
  • For this recipe, I used shucked corn but you can also cook it in the husk – see the tips below!

Cooking Frozen Corn in the Instant Pot

I can hear it now… someone asking, “What about frozen corn?” Yes, you can cook frozen corn in the Instant Pot. While I highly recommend fresh sweet corn (there’s just nothing better!), I understand that fresh is not always available or easy, so frozen is a great alternative.

And since we got a 50-gallon bag of corn, obviously we couldn’t eat it all while fresh, so here’s how to cook frozen corn in an Instant Pot:

  • Place the trivet in your pressure cooker, then add 1 cup of cold water.
  • Place the frozen corn cobs right on the rack, stacking them alternately, just as you do the fresh corn.
  • Seal Instant Pot and cook for 4 minutes on High Pressure.
  • Quick Release the pressure when it’s done to avoid over-cooking.

Why Cook Corn in the Instant Pot?

This may seem silly to some of you but we got a new cooktop when we remodeled our kitchen in 2019 and I hate it (but can’t really afford to replace it so soon).

It’s a smooth, touch-controlled glass-top contraption, and boiling anything on our cooktop is a nightmare. The minute one drop of water splashes out of a pot, the cooktop shuts off.

Do you know how often boiling water splashes out? A lot. And it’s so freakin’ frustrating to start a pot of water, then go do something else while I wait, only to come back and find it off and not boiling because a drop of water splashed out. Ugh!

Anyway… that’s why I love that I can now cook corn in my Instant Pot and never have to boil it again! It’s foolproof and so, so easy. Let me show you.

But first…

Tips for Instant Pot Corn on the Cob

  • If you’d like to cut the ends off your corn and cook it in the husk, you can! Just add 1 minute to your cooking time.
  • Change up your corn with toppings! Our favorite toppings are salt and butter, but you can also add parmesan, garlic, cilantro, chili powder, and/or lime juice.
  • Approximately 6 ears of corn will fit in a 6-quart Instant Pot and up to 9 ears will fit in an 8-quart Instant Pot. If the stalks are too long, trim them!
  • Quick-release the pressure as soon as the timer is done to avoid overcooking!

Now let me show you the easy-peasy steps:

First clean the corn and remove the silks.

Next, place the trivet in your Instant Pot, then pour the water in.

Place the corn in the pot, alternating the directions they’re turned so that there’s some space between them.

Seal the lid closed and set to High Pressure for 2 minutes. When done cooking, quick-release the pressure.

Open lid carefully and remove corn. Serve immediately with your favorite toppings!

Instant Pot Southern Green Beans

Instant Pot Southern Green Beans are made with fresh green beans and bacon, of course, in true Southern-style. These are a terrific side dish any day of the week and especially perfect for Thanksgiving, Christmas & New Years!

My husband jokes that green beans and corn were the only two vegetables his family ever ate when he was growing up. He actually says they had three vegetables… green beans, French-style green beans, and corn. ?

Coming from a family that ate all the vegetables, I had my work cut out for me exposing him to new vegetables. Granted, I was the pickiest of my siblings so I don’t eat all the things my family eats, but I certainly ate a bigger variety than Richy did.

But in the meantime, I needed to figure out how to add a little variety to our green beans and dress them up more than just dumping a can in a pot and heating.

Add bacon & onions to green beans for flavor!

One thing my family always did to add a lot of extra flavor to green beans was throw in a slice or two of bacon.  My mama would add onions too. As a young girl and teen, I didn’t appreciate the onions but now that I’m a little older, I don’t mind them so much.

Anyway, with that in mind, I’m sharing a recipe for how we ate green beans growing up.  The only thing I’m changing is that I’m making them in my Instant Pot.

Instead of having to simmer them for hours on the stove-top or bake them in the oven, cooking them in the pressure cooker dramatically reduces the cooking time.  And also? They’re still delicious!!

Benefits of cooking green beans in your Instant Pot:

Being able to cook them in the Instant Pot has other benefits too.

  • For one, if you’re cooking a large meal for the holidays, this opens up one more burner on your stove. If you’re anything like me, oven space and cooktop space is always limited during the holidays so this is an easy way to free up some space.
  • Also, you can cook them so easily and so quickly… you can focus on other dishes that’ll need more attention.  I love it that I can literally make these at the “last minute” and have them ready in no time!

That sounds like a win-win to me!  So let’s get to it…

Instant Pot Southern Green Beans Recipe

Instant Pot Southern Green Beans ingredients

Here’s what you’ll need for the recipe:

  • 2 pounds fresh green beans, washed and trimmed
  • ½ cup chopped onion
  • 4 slices bacon, cut into pieces
  • 1 ½ cup chicken stock
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon pepper

Turn on your Instant Pot and press the “saute” button. When the display reads “hot,” add the chopped bacon and cook until crisp. Remove the bacon and reserve for garnish, if desired.

Then add the chicken stock to the pot and deglaze the bottom by scraping the cooked on pieces with a wooden spoon. Cancel the saute function.

Add the onions to the pot and then the green beans. Season with salt and pepper.

Seal the electric pressure cooker with the lid and turn the vent valve to sealing. Press the “manual” button and set it for 8 minutes. When the timer beeps, release the pressure.

Serve green beans topped with bacon, if desired.  Of course you’ll serve with bacon, right?  I do… except I forgot to add it back for the pictures ?

Instant Pot Potato Salad

Instant Pot Potato Salad is so delicious and easy to make!  This is a classic potato salad with no onions or relish, although you can add either or both to make it your own! It’s cool, creamy, loaded with texture and flavor!

First… here’s a short video for you showing how I make the potato salad:

Potato Salad is easily one of my most favorite summer dishes! But I’m pretty picky about how I make it.  I don’t like raw onions. I really don’t like celery. And while I will eat potato salad with relish, that’s not favorite thing either.

I also make two different kinds of potato salad… this recipe I’m about to share and a “Loaded Baked Potato Potato Salad” that has bacon, cheddar cheese, sour cream and more!! Doesn’t that sound terrific? Maybe I’ll share that recipe soon.

Instant Pot Potato Salad

But for now, I present to you, my classic potato salad recipe with no onions, no celery and no relish.  This is a “southern” potato salad, so I do use mayo, mustard and boiled eggs.  I heard recently that there are potato salad recipes with no mayonaise and it shocked me.

I seriously had no clue… how can it be potato salad if it doesn’t have mayo??  But after a little googling, I was convinced… there are a million ways to make potato salad without mayonaise.

Anywho, one reason I especially love making potato salad in my Instant Pot is there’s no risk over overcooking the potatos and ending up with that mushy, watery texture. By cooking in a pressure cooker, the pototoes are cooked perfectly while retaining their firmess and original texture.

You see that also in this Instant Pot Baked Potatoes post.  In fact, this recipe starts in the exact same way as that one… with boiled eggs added in.

Also, I can cook the eggs at the same time as the potatoes and it comes together so quickly.

One last thing – I prefer russet potatos for potato salad. But I have made this same recipe with red potatoes and with Yukon Gold or yellow potatoes as well. All varieties are delicious!!

Alrighty, let’s get down to the recipe.  You’ll need 4 pounds of potatoes, water, eggs, mayonaise, mustard (I use spicy mustard, but standard yellow works great), then salt & pepper.

Description

Intant Pot Potato Salad is so delicious and easy to make!  This is a classic potato salad with no onions or relish, although you can add either or both to make it your own! It’s cool, creamy, loaded with texture and flavor!


Ingredients

Scale
  • 4 pounds potatoes* (about 8 large)
  • 5 large eggs
  • 1 cup mayonnaise (not low-fat, not Miracle Whip)
  • 2 tablespoons spicy brown mustard
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon ground black pepper

Instructions

Scrub your potatoes clean. Stab with a fork 4-5 times each.

Pour 1 cup of water in your Instant Pot. Place the rack or steamer basket in the bottom, then place your potatoes on top.  Then place the eggs on top of the potatoes.

Lock the lid and set the vent to “Sealed”.

Set to manual pressure for 6 minutes.*

After it beeps, use quick release and open the pressure cooker.

When the potatoes and eggs are cool enough to handle, peel them both and chop.  See my video here for how to quickly chop an egg.

Add the potaotes back to the pot, then the eggs and other ingredients.  Mix until well incorporated, then serve warm or chill for an hour or so if you like cool potato salad.

Instant Pot Baked Potatoes

One of the things I’ve come to love the most about my Instant Pot is the option to make the most common and basic foods even easier.  For instance, Instant Pot Baked Potatoes.  Make easy, fluffy, perfect baked potatoes in your pressure cooker in half the time (or less), every time.

I know getting excited about baked potatoes probably seems a little nuts, but there is nothing more versatile, hearty and filling than a baked potato. Keep it simple with sour cream and butter for a side dish. Or load it up with broccoli, bacon, cheese, chili, seafood, and/or any number of other toppings for a complete meal.

Often I bake a few potatoes and set out toppings and we have a “potato bar” for lunch. It’s always a hit!

Anyway, baking potatoes in the oven takes at least an hour. But doing them in the Instant Pot is so easy and much faster. And if you get potatoes that are relatively the same size, you can perfect your “recipe” and get them perfect every single time without worry.

So… let me show you how easy it is.

First, gather your potatoes anc scrub them clean. I prefer medium, Idaho potatoes so I can make at least one per family member (there are 8 of us).  Spread them out and poke holes in them with fork. No need to go overboard. Four or five jabs and you should be good.

You can, of course, do fewer potatoes. Or you can use larger “baking” potatoes . But if you do, you may have to adjust your cooking time by adding 2-3 more minutes.

Other than the potatoes, the only other ingredient you’ll need is one cup of water.

Place your rack in the bottom of your Instant Pot (or you could use a steamer basket), then pour the water in.

Stack the potatoes in and then put the lid on.  Lock the lid and set the vent to “Sealed”.

Shop:

Press the “Manual” button, then set it for 12 minutes.*

After it beeps, let it depressurize using the natural pressure release or you can quick release after it sits for at least 10 minutes.

When you open up your Instant Pot, you’ll have perfectly “baked”, fluffy potatoes!

I like to test my potatoes by cutting into them with a butter knife to be sure they’re tender. Because I almost always use the same size potatoes, I don’t worry too much about it these days because 12 minutes is perfect for us. But if you use larger potatoes, you may have to reseal the pot and cook for another 2-3 minutes.

We served ours with butter and sour cream, salt and pepper. A steak from the grill and some broccoli and it was a delicious meal!

Black-Eyed Peas with Bacon

Instant Pot Black-Eyed Peas was one of the first things I successfully made in my Instant Pot and got me hooked on this appliance! These peas are so easy to make and chockful of flavor!

We make these peas for New Year’s Day (as is tradition), but we also often make them for other meals throughout the year. One thing we do with Instant Pot Black-Eyed Peas over and over again is use them for Hoppin’ John.

I hope to share that recipe soon, but for now – I’m just gonna share the black-eyed peas!

Cooking times vary slightly, but you can cook almost any dry beans with this basic recipe.  Change up the flavors if you like – use broths, diced onions, garlic, other meats, etc. and the sky is the limit.

We do red beans for Red Beans & Rice, black beans for Taco Soup & Chili, pinto beans for Refried Beans and more.

I ended up shooting these pics on New Years Day a couple of years ago.  I’d waited until the last minute to plan and prepare the traditional New Year’s Day meal and gosh, I couldnt’ have been more grateful for the option to quickly do the black-eyed peas in the Insant Pot.

A truly traditional meal should’ve also had pork and cabbage (I don’t know why – I just know that’s “the” traditional New Years Day meal) but that wasn’t happening.

Steaks were already thawed and I had cornbread dressing thawed from the freezer (also not traditional).  Oh well… it was a delicious meal and the black-eyed peas were perfection!

Description

Easy & Delicious Instant Pot Black-Eyed Peas are perfect for New Years or any other occassion! These black-eyed peas are so easy with no worries about soaking, scorching, under-cooking, etc! And they’re delicious!


Ingredients

Scale
  • 1 pound dried black-eyed peas
  • 6.5 cups water*
  • 2 Tbsp. Better than Bouillon, chicken flavor*
  • 1/2 cup cooked, crumbled bacon (or real bacon pieces)

Instructions

  1. Add all ingredients into the Instant Pot.
  2. Close and lock the lid.
  3. Make sure the top knob is turned to “Sealing”.
  4. Press the Manual Button.
  5. Adjust “Pressure” to high (if not there already).
  6. Set for 30 minutes (using the + or – buttons) and you’re done!
  7. I let mine cook, then naturally cool (although it will keep warm until you turn it off).
  8. They were perfect – no other seasonings were needed!!
  9. *We like our black-eyed peas really soft. If you prefer them a little more firm, you might want to cook for 20 or 25 minutes vs. 30.
  10. **It will take longer than 30 minutes for them to be ready to eat because you have to wait for it to pressurize and then wait for it to depressurize, but it’s insanely faster than soaking then cooking on the stove the traditional way. Pressure Cooker Curry Cauliflower Mash

I know you’ve seen that I am already a huge fan of cauliflower.  I mean who says they LOVE Cauliflower Mash 4 times in a single post? 😉 This Pressure Cooker Curry Cauliflower Mash is very similar to the regular recipe.

Please, don’t knock cauliflower if you haven’t tried it like this! It’s SO good!  This is a great alternative to potatoes (WHAT? who wouldn’t want to eat potatoes? 😉 )

Your kiddos probably won’t even notice the switch!

  • Total Time: 20 mins

Ingredients

Scale
  • 1/2 Cup White Wine
  • 1 Cup Chicken Stock
  • 2 tablespoons unsalted butter
  • 2 tablespoons curry powder
  • 2 teaspoons kosher salt
  • 1 head cauliflower

Instructions

  1. Set your Pressure cooker to “saute” (or brown)
  2. Pour in wine and chicken stock
  3. Add Butter, Curry Powder and Salt, let simmer for 1 minute
  4. Add Cauliflower, set to high pressure for 15 minutes
  5. Quick Release
  6. The Cauliflower should pretty much mash itself! Reduce the sauce by half and add more butter if you want!

Oh my word! Have you ever had Instant Pot Cauliflower Mash?  Putting cauliflower in the Instant Pot makes it so easy to make that I could eat it everyday.  Not to mention, my kids are totally fooled and think it’s mashed potatoes! 😉

Cut the entire cauliflower down and throw into the pressure cooker for 3 minutes on high pressure.  Be sure to add the rack that came with your Instant Pot first.  Fill with two cups of water.

Take the cauliflower from the Instant Pot to a food processor with 2 ounces of butter and a splash of buttermilk and process the heck out of it! 🙂  Not kidding, the more you process it… the better!

You know it’s ready when you have this very creamy consistency.  Add salt and pepper to your liking.

We ate this with our yummy whole chicken in the pressure cooker.  You can eat it with whatever protein you would like – it goes well with anything!

I love this Easy Pressure Cooker Spaghetti Squash recipe for nights that we need some healthy “noodles” in our life!

 

Easy Pressure Cooker Spaghetti Squash

I never really liked squash.  Then, my chef husband introduced me to spaghetti squash noodles…he threw on his amazing meatballs and I was hooked!  We were even able to trick our picky 5-year-old that they were noodles and he asked for seconds.

The only thing I don’t like about these is that they take so long in the oven.  So as you can guess, this isn’t a oven recipe for spaghetti squash. 🙂

You will want to grab the rack that was sent to you with the Instant Pot.  Add two cups of water to the bottom of the pot and poke at least 6 holes with a fork in your squash.

Set your pressure cooker to 16 minutes on high pressure and quick release.

(First time?! Hit the “manual” setting and it will default to 30 minutes. Use the minus button to go to 16.)

Cut open the squash and take out the seeds, then use a fork to scrape out the inside of the squash.  Scrape everything out until you reach the skin.  It should be very easy to scrape everything out, if not, pop it back into the pressure cooker and add a couple minutes.  Enjoy with meatballs, Easy Bolognese Sauce or just by itself!
