Instant Pot Breakfast Casserole with Ham and Egg

Breakfast is so important for a great day, and this Instant Pot Breakfast Casserole with Ham and Egg is a favorite option in our house.  It comes together easily, cooks while we get ready for the day, and is satisfying for hours.  A hearty breakfast is a must with a house full of kids, and this one makes everybody happy.

Instant Pot Breakfast Casserole with Ham and Egg

My 11 year old son actually made this the day I took pics. He’d been begging to make a special recipe for breakfast, so I encouraged him to try this one.

But I have to tell you, the first time around, we thought the recipe was a bust. After taking a bite, I realized why… he forgot he hashbrowns!  There is way too much seasoning in this casserole to skip a main ingredient!

However, after pointing out his mistake, he immediately jumped up and made another batch.  The second time, the recipe was a hit!

And I love that all of the ingredients are staples in our home, so this was easy to pull together without going shopping!

To make this Instant Pot Breakfast Casserole, you need a few ingredients and supplies.

First up, you’ll need a dish that fits inside your Instant Pot. I use a simple 7 cup round Pyrex dish (this one fits perfectly in the Instant Pot).  I’m sure there are other options but I bought a set of 4 of those so I’d always have one ready to go!

Also, you’ll need a trivet for placing the bowl inside your pot.  Some use an aluminum foil sling, but I prefer using the trivet that has handles. Another option would be to use a bowl small enough for you to easily remove it with silicone pot holders.

This Instant Pot breakfast casserole is going to be a favorite option for weekend breakfast.  Serve with a side of fresh fruit and you have a complete breakfast the entire family will enjoy.  It’s even a perfect way to use up leftover ham after the holidays!

Description

This Instant Pot Breakfast Casserole with Ham and Egg is delicious and heardy! It’s also super easy to put together in your Instant Pot!


Ingredients

Scale

6 eggs

1 cup chopped ham

2 cups frozen hash browns

1 cup cheddar cheese, shredded and divided

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon black pepper

1 teaspoon salt

1 cup water


Instructions

Directions for Instant Pot Breakfast Casserole

First, spray your cooking dish with non-stick spray

In a large bowl, whisk eggs, onion powder, garlic powder, black pepper, and salt.

Mix ham, hash browns, and 1/2 cheese into egg mixture until well combined.

Next you’ll pour the mixture into the prepared bowl.

Top with remaining cheese.

Pour water into the bottom of Instant Pot insert and place trivet into the pot.

Place your casserole dish into Instant Pot and set on top of the trivet.

Place the lid on the Instant Pot and set to seal.

Set to manual for 15 minutes.

Allow to NPR (natural pressure release) for 5 minutes.

Remove from Instant Pot carefully (use silicone mitts if needed) and serve.

If you’d like to brown the casserole a little, place it in your oven under broil for about 3 minutes to get a brown topping!

Notes

My family loved this as written, but if I were making it just for me, I’d cut back on the onion powder.

While I don’t eat pork, my guys do.  That means that this recipe for Instant Pot Pork Carnitas is definitely a hit in our house on busy days.  They love coming home to a hot meal, and I love having what would normally take hours, come together in such a short time.  This flavorful meal is a great addition to any menu, and will soon become a favorite for the whole family.

Instant Pot Pork Carnitas

I start with any cut of pork roast.  You want it to have a bit more marbling than not since that adds flavor to the meal as it cooks down in the Instant Pot.  However, just find what works best for you.  Usually, a 2-3 pound pork roast or pork shoulder is a great choice for this.  A tougher cut of meat is best since this is intended for a slower cooking process.  No need to waste a tender pork loin on this recipe.

Ingredients for Instant Pot Carnitas

3-pound pork roast

1 tablespoon olive oil

2 teaspoons onion powder

2 teaspoons garlic powder

2 teaspoons dried oregano

1 teaspoon chili powder

1 teaspoon salt

1 teaspoon black pepper

1 clove garlic, minced

1 cup stock or water (I usually use chicken stock since I keep on hand)

Directions for Instant Pot Carnitas

Add olive oil to bottom of Instant Pot liner

Place pork shoulder or roast in bottom of Instant Pot on top of olive oil.  This adds some flavor, but also helps prevent initial sticking in heating.

Sprinkle seasonings over the top of pork.  I usually mix them together in a small bowl ahead of time, but you can season in whatever method you prefer.

 

Add in minced garlic.

Top with stock or water (your preference).

Instant Pot Carnitas are mouthwatering and easy! This Instant Pot Recipe is a great way to use a pork roast easily without turning on your oven! A fun Mexican inspired dish the whole family loves!

Add lid and set to seal.

Select Meat option and set to 55 minutes.

Allow to come up to pressure and complete the cooking process of 55 minutes.  Quick release, and use tongs or fork to shred meat mixing with juices to help retain flavor.

Instant Pot Carnitas are mouthwatering and easy! This Instant Pot Recipe is a great way to use a pork roast easily without turning on your oven! A fun Mexican inspired dish the whole family loves!

If you prefer a crisp texture, you may drain some liquid off and use the saute feature to crisp the meat for 4-5 minutes prior to serving.  This is not necessary and is only a texture preference for some.

Serve with tortillas, sour cream, salsa, pico de gallo, guacamole, or any traditional toppings of your choice.

Delicious Instant Pot Pork Carnitas in 1 Hour

As you can see, a traditional pork roast would take hours to cook down in the oven, and then would take 20-30 minutes on a stove top to infuse the flavors and crisp the meat.  Using the Instant Pot allows you to walk away and cook this meal in a little over an hour from start to finish.  It’s also ideal for summer since you aren’t heating up your home with a hot oven.

We love serving this with fresh locally made corn tortillas, but you can serve alone, on a salad, in flour tortillas, or on nachos.  It is so versatile and delicious.  If your family likes things spicy, you could even dice up chiles or add more chile powder to the recipe to kick up the heat!  Whatever you choose, this Instant Pot Pork Carnitas recipe is going to be a hit with your family for sure!
